Makes me wonder if these folks influenced our recipes in the southeastern U.S.? Hot polenta garnished with cheese is what we would call "cheese grits." The pork dish cooked in lard fits our traditional diet perfectly. This meal looks delicious. Such a beautiful lady is Belu Elena. Thank you for showing us her talent. It's also impressive how clean she keeps everything wrapped in cheesecloth or otherwise protected against insects while the cheese is prepared for smoking.
Very good question. Culinary influences are very hard to track down. I was wondering the same thing. For example, the recipe shown in the video is called cașcaval in Romanian and it originated in Italy. In Italian is named cacciocavallo, literally cheese on horseback. It seemed that some Italian craftsmen were brought into the area by King Ferdinand I, so maybe they brought with them the cașcaval? It makes sense... The pork in lard must have been a way for many cultures to store meat before refrigerators were invented, it's just a guess.

Și eu iubesc sa experimentez macar o frântură din cum se trăia odată și mă bucur foarte tare să împart asta cu toți oamenii, îndeosebi cei de peste hotare, unde în mare parte aceste tradiții s-au pierdut, sau poate se practică mai mult in medii controlate, nu ca un mod de viață. That would certainly keep you busy adding the wood shavings to the smoke fire. What is the favorite wood for smoking? @@munchkin5674 Hi. The lady used green alder wood, and wet fir shavings to jeep the fire smoldering. The fire source ia away from the smokehouse, but a smoke and a Little heat do come inside, otherwise it would melt the cheese. She kept the fire going for two hours. Hope it helps. Gr.🤗

Buna ziua, la un kg cașcaval au intrat aproximativ 6-7 litri de lapte. N-aș putea sa va spun exact cat cheag a folosit, fiind cheag din comerț avea gramajul indicat pe etichetă.
Superb. Dar era mai bine daca tanti ar folosi mai putina plastic in realizarea cascavalului, mai ales cu procesul fierbinte. Totuși as mânca acum o felie din cașcaval.
