Receiving my new Lone Star Grillz offset smoker! These are hand built to order in Willis Texas. They offer many different styles of smokers, grills, and even fire pits. All hand made in USA! They use all new materials in the construction of these smokers, including new 24" 1/4" wall pipe, 1/4" plate steel for the fire box, and most all of the accessories and also 1/4" steel. I wanted the classic offset pipe smoker style and opted for the 40" version. This smoker is heavy duty and should last me my lifetime. I'm looking forward to using this bad boy and continuing my learning when it comes to the art of smoking and BBQ!

A tip for the fire box, I stack up fire brick along the walls of my fire box with heat Bricks. It helps the smoker run more efficiently and will protect the paint a lot longer too

Yup! The paint always burns off, it rusts and looks like crap. When I had an offset I used another piece of sheet metal inside as a baffle and the paint never come off.

That method is called the minion method. Ive build charcoal baskets like that for all of my smokers. They work good on a long smoke. You got a good unit there. I would suggest you get a BBQ guru, I found that when I run under mine under my patio I don't get as much draw on the chimney. Also I would not put water in the bottom of the smoke chamber, it gets pretty messy. I would use a water pan. Season it up and make some smoke. You stated at the end you are right they are to big for just that one item smoke. I don't have any small ones I've got three 30" x 48" I only use them twice a year. I think I need to build a smaller one for just the wife and I. Thanks for sharing.

Nope not true. The "Minion Method" is named after Jim MInion the guy that invented it for use with the Weber Bullet. Place a small number of hot coals on top of a full charcoal chamber of unlit briquettes, and then control the burn rate by adjusting the bottom vent. If done correctly, you can get to 18 hours as the briquettes are progressively burned. The LSG is setup to use the "fuse" or "snake" method where the fire slowly burns the string of charcoal when it's started at one end. You can reference the Weber website where Jim Minion describes how he came up with it: tvwbb.com/threads/history-of-the-minion-method.21136/ OR you can reference Meathead Goldwyn's book "The Science of Great Barbecue and Grilling," page 131.

I went on their website. Base price is $1,895. Options will cost more. When I'm ready to buy a smoker of this style, I'm going to buy it from Lone Star Grillz. Love the quality of workmanship. Thanks Adam for sharing.

They have several models to pick from that should help with anyone’s budget. Take a look at the 20” version. They fabricate the cooking chamber instead of using pipe.

Congrats Adam that is a really well made stout smoker. That is a Go Big or Go Home unit. A serious investment which will keep you grining for a long time.The options you chose make s lot of sense, especially the larger wheels to raise cooking surface to save your back. Your brisket and pork butts will retain more moisture and better smoke penetration. Use Lump charcoal in the snake basket. Try grapeseed oil (much higher smokepoint) and a spray bottle and clean cotton cloth for your seasoning spray. Pam smells awful when it reaches it smokepoint.

That smoker is a tank!!!!! Have you ever used Chinaberry as the smoking wood? A friend from Mississippi introduced me to using Chinaberry. To me it sounded totally foreign, but I gave it a try, and for anything poultry, it is amazing. I still prefer one of the fruit or nut trees for pork, beef seems to go with any wood and depends on what I am smoking it to go with. But that is the beauty of smoking meat, so many subtle variations. I have a large, 3 chamber smoker, and this past Thanksgiving and Christmas I smoked a large (25 plus pounds each time) turkey, cornbread dressing, sweet potato casserole, and another casserole all at the same time. It does require some prep the day before, but the morning of, I start smoking around 6 am, and then just add the different dishes as the turkey cooks. Everything was done about 1:30 pm and the kitchen did not look like a war zone afterwards.

I seasoned mine inside and outside with canola. Once in a while I spray the outside and rub it down before a smoke to keep the outside looking good.

I built one very similar to this about 12 yrs ago before I had the plasma table. Yes it's a lot of work but well worth it. Hard to find a place to buy one of this quality without spending thousands. Congrats on the smoker glad to see it's not backwards like some. Firebox should always be on the RH side. :) Briskets are so easy to cook and so good. I don't think I remember seeing you cook a brisket. I would be glad to do plasma cuts 1/2" or thinner for you for free if ya need anything Adam. Enjoy your new smoker.

Congratulations on the new smoker Adam. I didn't even know you were into BBQ. I got my 20x36 LSG about seven months ago. My small pit is really efficient on wood use. You might get the fire management basket also. It make controlling temp even easier and saves a little on wood too. Looking forward to seeing your adventures in smoking.

Great choice in smokers. I was looking at them a couple years ago but... Anyway now I have switched to the lazy way with a pellet grill. With the weather being so inhospitable here in TX for most of the year I am done spending hours outside cooking and dealing with the heat. Now I can put a brisket on the grill in the evening and I don't have to touch it for 12 to 16 hours and it comes out perfect every time. I guess that's what all the pecan was for. Gotta figure out how to get a load of Oak and mesquite to you.

Nice smoker for sure! Remke makes some high temp 1/4” NPT strain reliefs that’d probably work nicely for your temp probe cords. Good luck with the new smoker can’t wait to see the first cook.

What an awesome smoker!! Very first class. Years ago I got an old 24" diameter by 6 ft propane tank and built a similar sized smoker. The down side I found with large smokers is that they are not very efficient. It took the same amount of wood or charcoal, which was a lot, whether I was cooking 2 chickens or 12 chickens. Also on cold days I had to wrap the smoke box with a blanket in order to reach and maintain 250 degrees. You are going to have a lot of fun with his smoker.

Very nice! I don't know if it was mentioned on here or in the instructions, but seal the lid to the smoke chamber! Clean the lip around the lid real well and add a small bead of silicone, then spray some cooking spray around the lip of the smoke chamber so the silicone doesn't stick and close the lid. Wait a day until it's cured before use. It helps with draft and keeps the smoke in. Made a big difference on mine.

Adam on your new Grill see if you can turn the handle portion of the ash tray and the charcoal bin to see if the handles towards the door opening to be able to grasp them upon opening the door. seems to be a more apropos to me

I like how you show what a pain in the ass it is to pull it off the pallet, move it around to the back of the house etc. I wish I'd had two pieces of wood like that when I moved mine (not a lonestar, but still heavy to roll without something flat).

Pot of beans sits there in a cast iron bowl. I think they are down the road from me - have to find out. Very nice and I see many here in Texas. Yep - road trip is easy - maybe 150 miles one way. Pecan is fine and nutty. Plum is also good. Sometimes box stores selling cookers have polly bags of various. Oak can get strong. Pecan and pork and Pecan or Plum is for chicken. Pecan for steak/hamburger.

That’s an awesome smoker! Could you please tell me the width of those tuning plates and the distance between them and the lower cooking surface? I have a homemade one that I’m having temp issues with and I’m thinking of adding these. Love your channel!

Very nice. Honestly later if you are serious you will want to weld that firebox lid shut ... I did on my Klose which is really identical to yours. Too much air leakage .... will cook entirely different if welded shut. I cut off the handle and the hinges .... left the same style griddle grate up there and welded the lid closed. Congratulations, I know you will be happy!

I live in the "Texas BBQ Trail" and while I don't know how it is where you are in Florida, Adam, In Central Texas we would avoid stacking our wood right up against the house unless you can keep it absolutely dry. Reason being, if that wood gets wet, you'll get pill bugs in there, and they'll invade your house in amazing numbers looking for the air conditioning in the hot months. If you can keep the wood high and dry, you should be fine though. Happy smoking. You've got a nice one there.

Stacking wood next to your house is not a good idea. It invites termites. The best would be somewhere along your fence away from the house with some type of cover to keep it dry. Wood in my part of WV is around $40 a truckload. I always thought that was expensive.

125-150 seems to be the going rate around my area. Not bad at all considering the labor that goes into collecting, splitting, delivering and stacking.

Depends on what you’re planning to use it for. I definitely went a little big but the price different between this and the next size down wasn’t much difference, so I opted for more room. They make some smaller units that save you some coin.

I would raise the wood grate at least 2" to allow for more room for ashes and air flow under the wood.... :-)
