I always choose the thinner and more flaky filets of halibut when I buy it at the store. This is key when cooking whether frying, pan searing and oven finishing, or just baking or broiling. Even flakiness helps distribute flavors of spices, smaller flakes are much more tender. However once in a while I will buy good size square looking filets to make my specialty... Pistachio Encrusted Seared Halibut with a Garlic, Lemon, Butter and Cream Sause with Asparagus, and Roasted Red Potatoes with Garlic & Onion.

Opening the video with a demonstration of the proper use of a file is a big plus for me. In my 7th grade metal shop in 1964, the teacher Mr. Edge, (really) made me write "A file only cuts on the forward stroke." 100 times on the blackboard, Some things just stick with you.

I was taught when filing that the fwd stroke cuts, but every 3-5 fwd strokes should be followed by a reverse stroke to clean the debris from the file teeth.

@@EISAlaska I am from far away - Bulgaria. Thanks for the nice adventure for us! I have a book about octopuses. She began by describing a case from ancient Greece. There was a good cook there. Octopuses became fantastic with him. One day he had a big client. I don't remember the name, but he was a serious man - a good man, like you. He really enjoyed the well-roasted octopus. He ate, ate, and finally got the interweaving of the charm! It is very painful. They called a doctor. The man said to him: You have messed up! There is no fix! You'll be dead in two hours! Our hero - he was spoiled a lot, but he decided that he would at least eat properly! He made a decision and said to the Master: I will die anyway! Then let me eat the head of the octopus too! At least I know I ate this deliciousness! I read the book 40 years ago, but I remember that the tentacles of the octopus before being cooked are beaten with a wooden club. To relax the muscles. Otherwise, the meat remains tough, rubber...

@@EISAlaska Nah! I'm sure that Mom keeps you all in line if and as necessary - one wave of the wooden spoon and everyone is back on their best behaviour, LOL. Seriously, to be able to do work you enjoy, even when the sets come in thin or the days are blustery with a bit of sleet in the wind, being out in that beautiful spot and with everyone in the family pitching in as needed - you are blessed. When I was a young lad and my Dad would take the Beaver on floats up to some lovely lake spot up in northern Alberta or B.C., it was always a pleasure even when there was work to be done. Often we'd be picking up one or two parties, maybe tying a canoe above each float (and chasing off the odd bear who'd climb up on a float and fall asleep in the sun (!), I never regretted any of it. For a few summers, we had a little "forward base" camp set up on a small island in one of the larger lakes, and my Mom and my uncle would "keep the camp," making breakfasts or suppers, with my uncle's Army coffee and what he nicknamed "Rum Buns" (I doubt there was much rum in 'em, but catchy name). We all worked, but it was always enjoyable. being on a beautiful lake in really pretty country. We'd see a lot of animals, but rarely had any problems. So, I have good memories of working with family, in really beautiful country. I was flying the aircraft (under my Dad's expert eye) as soon as I was tall enough to reach the pedals and see over the nose. Also got to pump out the buoyancy compartments first thing every morning, (even tied up to a pier, the float-tops were slick!), and "do the Daily" maintenance checks and routine. Very rarely had any problems - those engines were so well made, and a real pleasure to work on. Occasionally, we'd fly into Whitehorse, and occasionally up to Anchorage. It was a wonderful time to be living and working there, especially on long summer evenings, and meeting many good people along the way. I learned to always carry my bag of rocks when flying into a lake on calm days; the idea being that in order to see the lake surface properly, we'd do a pass over and toss out a rock, which changed the water surface from a flat mirror to one with nice visible ripples - the better to judge altitude when lining up to land on the water. It's surprising how easily the human eye can be fooled about the height above a flat calm surface! All the little tricks of the trade, and lessons learned the hard way by pilots in "the early days" about safe take-offs from and landings on water. Starting young, as I and others did, we were fortunate in both our 'mentors' as well as in the period. To see your family out at work on the water, as well as rebuilding your new vessel, "Emerald Isle" reminds me a lot about some of the best parts of life - being able to do what you do, with the whole family, and not just fishing but all of the other jobs (and skills) that you use or learn to do. In one respect we're lucky today - we have access to tools and materials (TIG welding and fabrication, for example), as well as modern electronics of every description. These certainly open up all kinds of new possibilities, undreamed of even just 15-20 years ago. Anyhow, enough blathering. Thank you for posting these - and all the rest - of your videos. You've developed an interesting production style and format, which makes each video something to look forward to. Thank you. E.I.S. Family - even though I'm not very good as a fisherman. But thanks to my Mum, who loved to read aloud, I did learn early in life that I agreed with the author Mr. Kenneth Grahame who wrote in his classic children's book "The Wind In The Willows," ". . . There is nothing - absolutely nothing - half so much worth doing as simply messing about in boats.” {I got a good chuckle while checking the spelling of the author's name. the entire paragraph was quoted in the opening of a recent paper presented in one of the regular academic & research engineering Journals published under the auspices of the world respected Institute of Electrical and Electronic Engineers [the IEEE Oceanic Engineering Society] in their Journal, the "IEEE OES Beacon," the March 2022 edition. I'm fairly sure that Kenneth Grahame, for whom writing children's stories was part of his evening relaxation, after his daily work as a Clerk in a large bank in London, England, ever imagined his whimsical introduction would one day be part of the opening of a Paper published in a top-level Engineering journal read world-wide, LOL}.

the part where the yellow eye first start comin up you could see something sticking out of its mouth and a common misconception is that its the air bladder but actually its the stomach thats why all that junk falls out when they come up from deep places, the air bladder is separate from the stomach and pushes out the stomach while they both fill with air

@@OTRAL24 I wanted to be a treasure hunter. But I also wanted to feed my family. I've been a garbage man for 20+ years and realized years ago that I am a treasure hunter. Except I get paid a regular wage and the treasure comes to me. The point of this ramble, Look at what it is about fishing that draws you to it and see if there is something else that fits that template. Not saying this is THE way, this worked for me. Good luck to you.

I FISHED Deep sea for a few years, longlining, with an automatic baiter, and automatic hooker...both the North Sea, and the North Atlantic..(1Month on -- 1 wk off.)..docking at FRAZERBURGH, SCOTLAND, & HOLYHEAD, ANGLESEY UK....it was here that I saw a HALIBUT so BIG, it was lifted up & off deck, with a FORKLIFT..!! I never found out the weight of this fish, but it's thickness was more than I am from shoulder to shoulder..THE FORKS, were at least 3mt hight, with the fish suspended, it's nearly touching the forks, and its tail touching the dock..!! It was the biggest fish, up until that point, that I ever saw with my eyes, real life, .not from a book!!..it was an awesome sight..!! Great video guys, brought back some long lost memories, thank you 🙏😉🐟
