Crawfish étouffée my way! It is full of flavor and simple to make! Make sure you are using quality Louisiana crawfish tails or substitute for shrimp and it will be just as good!

Man look. I moved away from home to TX not that long ago and believe that the ancestors would be mad if I didn’t make this regularly. Only thing I do different is when I add my tomato paste, I throw in some dried shrimp to make that seafood flavor pop. Don’t smell too great at first but trust the process and it comes together.
? Does your dried shrimp still have the shell on? I've used it once in my gumbo, the shells were all in it. But it was good though. Maybe I bought the wrong kind
I lived in Louisiana for almost four years and tasted almost every Cajun delicacy I could get thanks to the GF I had while I was down there. She was from Gramercy and brought me Zapp's Cajun Crawtators one day. From that day, I was a sucker for Cajun cuisine. Crawfish Etouffee, Red Beans & Rice and Roast Beef Po'boys were my overall favorites. I really liked the Jambalaya I had at a Jambalaya party and the Pistolette rolls were better than those yeast rolls you get at Texas Roadhouse. There was a gas station just off post that made the best crawfish pies, too. Since I moves back up to northern New York in 2000 I have been slowly starving to death because the food is sh**t up here. The closest I can get is driving 2 1/2 hours away to a Popeyes. Although, I do make a pretty bangin' Red Beans & Rice on my own. It takes a day to soak the beans and all day to cook the dish. After watching the Etouffee vid, I'm going to attempt it pretty soon, it's looks very similar if not easier...

@@Mutch820 I used 4 celery stalks, an onion, two bell peppers, 1 small can of tomato paste, 3/4 cup of flour, about 3 cups of stock, as much chopped parsley and green onion as you like, and about 24 oz of crawfish tails. Seasonings are as much as you'd like as well depending on how spicey you want it. I used Tony chacheres for the creole seasoning.

Excellent! Just like I do it, but I like to add a few splashes of Worcestershire sauce. Crawfish are in short supply and expensive this year. Shrimp work just fine as a substitute. I always have shrimp stock in the freezer, I make it from the shells.

I need to learn how to make your version. Pappadeaux is my fav for creole foods. This looks better than what you can get at a restaurant! I bet it tastes just as great too ❤
An experienced cook will know, but there are ppl here learning as witnessed by the comments. How much flour? I always make my roux first and then add my vegetables. Was it one pound or two of the crawfish?
I knew you was the real deal when you said don't use the crawfish from China. So many people fall for the Okey doke & buy the Chinese crawfish 😡😡 I only buy local crawfish.
