Recipe：
Cube a large eggplant
Sprinkle sea salt
Mix well
Add water
Soak 20-25 minutes to remove the astringent flavor
Cube 1 lb boneless chicken thigh
A pinch of sea salt
1/4 tsp black pepper
1 tbsp soy sauce
1 tbsp cooking wine
Mix well
1 tbsp olive oil
Mix well
Marinate for 15 minutes
Squeeze the water out
Heat the pan
Add olive oil
Low to medium heat
Add chicken cubes
Stir until the chicken turns white
Scoop out the chicken
Slice a piece of ginger
1 red pepper
Remove the seeds
Chop half the pepper
Add more olive oil
Add ginger slices
Add 1/2 tsp cumin seeds
Stir until the seeds smell nutty
Add 1/8 tsp garam masala
Add 1/2 tsp turmeric
Add 1/4 tsp cardamom
Stir to coat with oil
Add eggplant cubes
Add red pepper
Toss to coat with oil and spices
Add 1/3 cup water and stir
Cover the pan and cook for 5-6 minutes
Tossing every 2-3 minutes
Add cooked chicken
Stir to coat with oil and spices
Add 1/3 cup water
Salt to taste
Stir
Cover and cook for 6-7 minutes
Chop a small handful of parsley
Garnish with parsley
Serve as side dish or with pasta, noodles or rice
