Ingredients
1 packet of filo pastry (400-500g)
5 medium eggs
400g yogurt
200-300g brine cheese
100ml vegetable oil
This is a recipe and how to make a traditional Bulgarian banitsa, which is a savory pastry made with whisked eggs and kiselo mlyako (similar to Greek yogurt).
There are certainly many different variations of the ingredients and the layering of banitsa but I am showing you one of the easiest ways to make a delicious one.
We like our banitsa with ayran (diluted savory kiselo mlyako or greek yogurt) or boza (sweet wheat drink).
On the New Year's day we make banitsa and put coins or lucky charms for the upcoming year and it is one of the ever followed traditions.

I lived and worked in Pleven, Bulgaria 10 years. I also speak bulgarian fluently :-) I love Bulgarian cuisine. Banitsa, my favorite!! Besides i love ljutenitsa, svinsko s zele, musaka :-) :-) :-) vsi4ko hubovo a ziv i zdrava. pozdravi ot Austria :-)

Being able to pick a warm banitsa at a corner shop and savour it in a cold morning in Sofia was one my favourite things to do. :')

Banitsa is my all time favourite. I have visited Bulgaria many times and I love the country and its people. A nice wam slice of Banitsa with a cold glass of Ayran and you are transported to heaven. Your recipe works!!! PERFECT😍😍

Great Video! I Miss Bulgarian food. I visited Kazanlak with a Bulgarian friend who still has family there also went to the Black Sea, Pomorie, Sunny Beach etc in 2006. Had a lot of fun at the Disco teka I still remember the song Happy birthday to you lol. I still make an american version of shopska but with feta since we don't have the serene cheese at most grocery stores. Would love to see more recipes.

You can add 1 teaspoon of baking soda to the yogurt to make it swell in the final result. 😀

Have to try this at home :) I always love having banitsa for breakfast when visiting Bulgaria. On a side note, there is something that puzzles me. There is a restaurant in Sofia that servers a sweet lemony dish called banitsa too (also has those thin layers of dough). But its different from the more common banitsas I find everywhere (its more like baklava, but its not called like that)...

Can you add spinach? Is that the veggy in it sometimes? And if so fresh or frozen?

Yes, of course you can (yet it will not be the traditional milk banitsa, rather a special "version" of it). I would use fresh or frozen but in either case sauteed or at least seasoned.

There are lots of types of banitsa en.m.wikipedia.org/wiki/Banitsa My daughter loves the one with leeks and minced meet And since yougurt and bulgarian sour milk are quite different, if you are not in Bulgaria you better make some of the types with milk

Anyways, we need to separate the concepts of "Sour milk" and "Yogurt". On more than one occasion, I've witnessed foreigners frown to the taste of sour milk ( last time was in Croatia, but they make it just like we do in Bulgaria ). It was a gorgeous milk, but the westerners were shocked, because it was "Not sweet enough!". Yogurt seems to be a dessert in a westerner's mind... go figure!
