Four prominent brands from Chennai sit down to talk about why they continue being in the business. They also share their coffee recipes.

Only the 2% of the population. Mostly,,,Brahmins.+ selected others. The Hindu one time world standard is “ English Murasoli” now !!! So also Ananda Vikatan group ,,,top executives,,all திராவிட,,சிந்தனை,,சிமிழ்கள் Majority say 50 % tea,,, Balance. It is luxury for them ,,,these coffe & tea. They till the soil,,raise the crops including so called Stimulants,,staple rice,,pulses,etc etc and no body ,,cares,,bothers about them,,the elite. When whole world was ,,taking shelter Corona,,COVID-19 they supplied,,,continuously,,fresh,,vegetables,,fruits,,& all grains. !!!! Introspect,,dispassionately,,correct the wrongs.

My parents talk about filter coffee. I was looking up what it was exactly and came across this video. I’m second generation Indian-American & I love my espresso machine. My go to is a cup of Americano in the morning. Sometimes with a splash of hazelnut creamer. I surprised my parents with New Orleans French market coffee blend, which is the closest to the Indian filter coffee flavor! They loved it!

Filter coffee is unmatched. Unlike tea which is a simple recipe to make, the preparation of coffee is tough. The easiest way to make coffee is to use the simple South Indian metal filter which has almost mesh like holes at the bottom. Over the coffee powder when the boiling water is poured it drips through the powder slowly and ideally drop by drop. With each successive drop the concentration of decoction comes down. Normally the top part of filter which holds the powder is filled between 20 to 25%. The less percentage you fill, you will not get dripping but a useless liquid which will taste nowhere like coffee. Higher quantity of powder will delay dripping and the flavour will be lost. Also you need to keep the powder like a loose sand in a river bed. You can make a maximum of two fills of the top container by which time 95% of coffee juice will be extracted without tar. After that the residue can only be used as a cleaning paste for vessels and will be still acidic. Unlike tea decoction, which has a life of less than 10 minutes, coffee decoction at room temperature stays for 8 hours though its flavour will evaporate. The liquid kept in fridge will remain for 4 to 5 days. You can make cold coffee also with the same liquid but that will need extra sugar. Coffee is unique. It does not blend with any additive. The only two female persons it accepts as friends are low cream milk and white sugar. All others are untouchable for him. It is masculine as it can within minutes trigger your brain cells and mildly revive the heart. Therefore a good medicine and please check with medical board on its long term impact on central nervous system as it weakens it. You can use stainless steel or brass filter but in case of brass, make sure that your water is not acidic

@@karpasurya Thanks for taking time to explain it. I appreciate it! Yes, coffee is a stimulant and too much of it can cause palpitations, increased heart rate and even anxiety! lol That's why I only drink Americano in the morning and stick to decaf in the evenings :)

@coolScience, having lived outside India for almost 3 decades I can confidently say, there is no match to filter coffee. The sad part is in India it is disappearing too. My grandmother used to prepare filter coffee, almost I could smell the coffee till the gate of the house. It was that good. as the gentleman in the video was saying, once you have that coffee it doesn't linger, but the satisfaction that you just had coffee stays. So coffee has done its job. I highly recommend try the filter coffee in your next visit. Good luck and God bless!

I am hearing it for the first time that customers often ask to add chicory, I personally don’t like chicory in my coffee. So I purchase coffee beans.

Bs. I have traveled around Italy and the coffee you get there is pretty ordinary. Espresso is tolerable but nothing like the original Kumbhakonam degree coffee one gets in musical sabha. Nothing to beat Tamil Nadu filter coffee. Yes, I have various coffee beans from Arabica from Kenya to Brazil and yes, I have a very expensive home coffee machine ( over $2000) and yet, the filter coffee from TN beats them hollow. Nothing like my childhood coffee, the green beans got roasted inside the house, nicely grounded and made with fresh boiled milk and decoction.

Adding chicory is the Indian way of justifying the adulteration habit. Drinking pure coffee is not known here.

Adding chicory is not justifying adulteration. In India we drink coffee with milk. Chicory has sugars and when roasted has an caramelized flavor to it many prefer that flavor when consumer with milk.

Not really, it depends on whether you want your coffee to be on the thicker or thinner side in terms of consistency. Even coffee estate owners add chicory to their coffee if they want it to be thicker, personally I like my coffee with 10% chicory, anything more than that will take away from the coffee flavor.
