And IF (big IF) there is any leftover stew (after removing all the shrimp), the next day just add a can of sweet corn and another can of tomatoes for a totally different but just as delicious version of this stew. Add cooked chicken/ham/rope sausage for more meatiness. Addition of pepper flakes optional, lol.

It's really nice to have Toni on to tell the cultural stories of the food. Nice work! And Morgan is awesome; my family cooked with hamhocks in the pinto beans (with cornbread) we had almost every Saturday

I'd like to talk to the person at All Clad that decided that a short broad 6 quart pot was a stock pot. I specifically want to see him try to make a stock in it.

Thank you! It's more like a Rondeau than a stockpot. Ours is now primarily the rice/bean pot.

With making my collards, I started off with ham hocks but eventually gave up and moved on to using smoked pork shanks. So much more meat and the same great smoky flavor!

The fact of slavery is inescapable, especially when talking about an important part of American cookery. The point here is that many of our food traditions and recipes come from enslaved people, via West Africa.
