@@donteprince2891 they were wikinger hotdogs from tesco. They come in a glass jar. I sauteed them in a dry frying pan and added beer once almost cooked. Not to much beer just covered them and let the beer evaporate then added more. Added to the buns and topped with chilli I made. Dead easy and tasted great!! The first time I made them I followed a recipe from RU-vid and couldn't taste any difference but this way was great . Enjoy
Goodness, I’m truly sorry but this video while well intentioned I’m sure isn’t accurate. I’m sure this is a great hot dog, it looks like it might even be a better hot dog inspired by the original. However, Lum’s hot dogs weren’t any dog’s, they were Hebrew National All Beef 1/4 lb. The dogs were never scored. It may have been something one of the last store owners created. They were never steamed or boiled in onions. In reality the innovation in those days was to utilize a 30 lb countertop fryer filled with water to cook them incredibly fast. The beer came from the draught beer systems in those days being very inefficient and combined with the use of frozen beer schooners a great deal of beer head was developed. The Perlman brothers never wasted anything so they used to dump the excess head into a pan then dump the deflated head/beer into the fryers. When it was busy they’d crank on the thermostat and the combination would boil almost instantly and the all beef dogs boiled in beer were great. The buns were kept in perforated pans in a steam table along with pans of sauerkraut and chili. The chili was actually made from McCormick chili seasoning. The “Steamed in beer” was a misnomer that was a brilliant marketing slogan. Again I’m sorry to disagree but I owe it to my father. My father was hired as an assistant manager and helped open the 2nd Lum’s with the Perlman brothers and worked tirelessly for them and John Y. Brown until the Weinerwald company bought them. Which was over 20 years. He eventually oversaw all the Lum’s in South Florida. I started working for them in 3rd grade as they had me opening the doors for their customers at store #11 for .25¢ an hr. Big money for a little kid. I was raised in the chain learning every position and eventually becoming the GM of the Miami Beach store and the 163rd Street store.
I truly appreciate your honest comments. I know I didn't research this prior to recording the video. A couple of quick Google clicks and I just threw this one together.
I remember Lum's well. There was one right here in Biloxi on Hwy 90 on the beach. They closed their doors many years ago, but I do remember the beer steamed dogs. Good eats!
We only had one visit to Lum's about 10 years ago, mostly out of curiosity (Bellevue, Ne) after a day at the Henry Doorly zoo... And I didn't even get a dawg that day! Wish I'd known then what I know now. Thanks for watching, Rus!
I grew up on Lum’s in Cincinnati in the mid-60’s to late 70’s. We also loved going to them in Dayton and Hamilton. They were always considered a favorite and my parents took us there often. Probably only Frisch’s and Skyline Chili got more of our family business. Lum’s beer dog flavor stuck in my mind all these decades and I can still “taste” and smell that steamy beer aroma if I close my eyes and think about it!! I’ve been making homemade Lum-dogs forever.....I always use full strength undiluted Budweiser (cheap and the original recipe brand) even though the actual recipe calls to dilute it 3-1 with water. Never saw the wisdom in that! I wish they were still in operation, and I’m frankly surprised no one has copied the basic recipe and retail approach......Beer steamed hot dogs are wonderful!
Hi Dan! I have a vague memory of Lum's from trips to Florida. It's sure sad to think a great hot dog like this will be forgotten. I also feel a special sadness over the loss of Howard Johnson's and their tender sweet fried clams. Your resurrection of this special hot dog was impeccable! The spiral cuts, the Zip Line craft beer, the onions, the heated grate, the Saverne Artisanal Kraut.... you went all out and the results were worth the effort! All I can say is GREAT JOB!!!
Thank you, John! A funny thing happened when I was typing in the tags for the video. I got a warning from Tube Buddy that there could be the risk of demonetization if I used "Saverne Artisanal Kraut" as a tag! I've never seen anything like that before. 10+ years on you tube and I thought I'd seen it all. Thanks for watching!
The movie shows him taking them out of a pot of water and then steaming them on the griddle, so they were probably boiled first and then steamed, and who's to say that the movie was completely accurate in the first place?
I saw Deniro buying Pacino a couple of Lums beer steamed dogs with chili in the film “The Irishman” .. it looked so delicious that I came to RU-vid to look it up .. I’m all the way in the desert of Southern California , but it’s still a sad shame to hear that this institution closed its doors for good back in 2017 .. I might never be able to try their famous beer steamed dogs , but I’m grateful for this video recipe!! Thank you and cheers!
I remember Lums fondly! I always had their beer-steamed hot dogs or the fried clam on a hot dog bun. The Lums I went to was in Florida! Thank you for this recipe, planning on trying it soon.
For a treat, every once in a while my dad would take us out to eat at Lum's. I still remember the smell and how good they were. Why do things have to change so much ?
Hi Dan! I've never heard of Lum's before... it sounded great. So sorry they closed up. Your hot dogs look delicious! I need to try this recipe. I need to check out that sauerkraut too. Another great video my friend. Hope you and yours are doing well and keeping warm!
Excellent - this is a local history lesson and good food in one. Sorry to hear that Lum's now has no locations, but thanks for cooking up this bit os local lore. Totally dig the MacGuyver Rolls!
...And I didn't even burn the house down! 😆 (It WAS a concern). Thanks for checkin' it out, Joe... OH, and good news; As I was searching (in vain) for the Caraway, which I was sure we *had* to have, I found an unopened shaker of Rome is Burning! Happy day!!! It was way, way back on the spice rack, buried for maybe 4 years following the big move!
Ah, Lums! Brings back happy memories! The Lum's in downtown Hollywood was next door to a movie theater, so we would see a film and then go to Lums for Beer Steamed Hot Dogs! Happy New Year Mr. Smokey Goodness man!
Must have been a great old memory, Sal. Glad I was able to conjure a few. We were RoadGeeking in a bad thunderstorm last Spring when we noticed Lum's was closed in Bellevue, and I thought about making a video. Glad it finally happened. 😎
Hey Dan great job scoring them :-) At least those dogs a quiet lol :-) Those look so good,I want one :-) An Extra "BIG" thumbs up :-) Happy New Year :-) ROCK ON!!!!!!!
My Dad owned a Lums in Tustin California in early 70s best hot dogs ever. best shakes seasoned fries and imported beers and best memories ever way ahead of it time
Saw the movie The Irishman and had to have a Lums Hotdog! I Googled Lums NYC only to find out they shut down. Then, like an Angel came out of the sky...this video!! I can't wait to make them and most of all EAT THEM! Thank You so much. Brother, they look amazing! Loads of Love from NYC🤘
Those look delicious Dan! I’ve never been to Lums but this is worth making for sure. Coriander actually sounds better than caraway for it. Great job brother!
On a trip to Maine in the 70s, stopped at a Lum's in Connecticut. Had a cheese dog. Damn that thing was so good. Spent 50 years trying to recreate it. Didn't succeed yet, but I still got buttons on my shirt, so try, try again
It's funny. We drove past it about a million times and finally stopped by once about 10 years ago. I forgot what I ordered there, but I know it wasn't a dawg... Wish I'd known. Thanks for watching, Lasse!
Ahh...The MEMORIES!! We used to have a “Lums” here in Auburn, N.Y. when I was growing up. It’s a Metro Mattress now. But I’ll always remember Lums. My childhood friends mother used to work there. And yes...Their hotdogs were EXCELLENT!!
Yea, I don't like messin' with that kind of wind. It was swirling in every direction behind the house. My "Nope" instincts kicked in fast. Hope you had a great NYE up there, Lincoln kind of exploded last night. An officer involved shooting and other madness all evening.
Looks good. Only thing I'd do differently is the liquid have equal parts beer to ginger ale, 2 cloves garlic, bone broth, soya sauce, and and a few drops Worstesher sauce.
We had a Lums back in the 1970's here, were they really cut like that or at all and were they served only with sauerkraut or were they served anyway you wanted ?
Lemme know what you think once you do! We dug 'em! I'd be willing to bet that you'd take them to a whole new level, being a professional chef and all. 😆 Thanks for watching, Kory. The Hotseat this week is gonna be awesome.
just watched the irishman and they go to lums, these where chili dogs mind but they where cooked on a flat top then sloshed in some beer and covered with a closh to steam.
If this is the authentic Lum's recipe, then The Irishman got it wrong. The method here is basically scoring the dogs before adding them to a beer-based stock and boiling them before grilling. In the movie there's no boiling, just beer poured onto the dogs as they're grilling. Neither method is 'steaming', technically.
If you steam them in a cooker with quality beer I was surprised how good they came out. I’m not using water ever again. Still hurts me to see that beef being wasted though …..
Lums steamed their hot dogs. I grew up with a Lums in my neighborhood. Their hot dogs were not scored. This recipe might be good, but I don't think it's Lums. But anything goes on RU-vid. Sauerkraut will overpower even a mediocre hot dog.
ok.....good video but a couple things: i think the buns are better steamed, you gotta strain some of those onions from the broth and put them on the dogs and of course - Where's the chili?????
Everybody has to be K-Paul. Can't you just do it like Lum's, like the video title says? Those are boiled hotdogs in craft beer, NOT Lum's steamed dogs.
S000000000000000000....is it me or doesn't the sign say world famous "STEAMED" hot dogs?? unless I'm missing something, these are BOILED hot dogs. NOT the same.
