Hey there, i've got an answer to your question about high end white rums! I'm a bartender with a special interest in rum, and it can be a tricky spirit. Rum can be deceptive, and colour isn't always a good indicator of age. A lot of white or light (or whatever you want to call them) rums are actually aged, usually for three years in stainless steel tanks or new oak (higher end rums use different woods) and then charcoal filtered to remove the colour (Havana club three year for example). This filtering process does remove some of the flavours associated with age, but that's not necessarily a bad thing in this case as the point of the ageing is to mellow the spirit out, rather than give it those woody aged flavours. Yes lighter rums aren't usually drunk neat, as they don't have previously mentioned wood related flavours. But that doesn't mean that lighter rums can't be flavourful. Wray and Nephew make a brilliant, completely unaged overproof rum that is absolutely jam packed with flavour, so much so that people sometimes use it in a similar way that you would use bitters, in tiny amounts. There's also many many white Agricole rums, a style that uses fresh pressed sugar cane juice instead of molasses that gives a grassy and fresh character to the rum (Aged Agricole rum also exists and is equally delicious). The deceptive nature of a rums age is also true for darker rum. lots of rum has colouring added, especially spiced rum, as well as possible flavourings to mimic the tastes of age. Going to stop this now, if I go on this will become an essay, but hopefully that's some more insight into the world of rum. (also this channel is so useful, it's so great to see more much needed content for interesting and complex non alcoholic drinks)
