Made this last week and this was very good. I don’t have the land to cook outside as you did so I used liquid smoke and some added smoked paprika. This was the first of your recipes and I’m hooked. Even my mom who makes old school southern Mac-n-cheese enjoyed this dish.

Hello Gaz - thank you so, so much for posting your videos. You're an inspiration. Your joy at what you do makes me smile. The sincerity, authenticity and enthusiasm that runs through every video is utterly gorgeous. I'm wondering: Does the mac'n'cheese freeze OK? I want to do this for meal prep and... Could I easily substitute jackfruit for the mushrooms? I think I would need to pull the jackfruit before cooking, and add aromatics earlier on. I think the sauce might work as is with jackfruit? Thanks for brightening up the winter months and making life more fun :)
