Machh'er matha diye bhaja moog'er dal: In the hierarchy of dals, this dal with fish head occupies the highest pedestal in Bengali cuisine. If you are trying to impress your guests, this is the dal to make. That is why this dal finds place in wedding lunches, first rice ceremonies, or anytime you invite guests over for an afternoon feast. To make this dal you need the freshest fish head you can find, and guess what is the best way to ensure the fish head is fresh? You buy a live fish! You could use any large freshwater fish head for this, but the Bengali favourite is the head of a large katla fish-a delicious freshwater carp. This is commonly served with a bhaja (any fried dish) such as beguni (video link below) or jhuri alu bhaja (video link below). If you are buying good quality fresh fish and not eating the head, you are missing out.

Started watching Bongeat two years back and now I am a mother of a beautiful 5month old girl. I was planning to make this "macher math diye moong daal" for her Annaprashon. And here you have it! One of my most favorite dal recipes. It can be teamed up with jhur jhure aloo bhaja as well. But normally the fish head is broken into smaller chunks.

I already know 80%of your recipes. Yet can't resist watching your videos over and over again. The sound of every chop it slice or grind. The colour, freshness of the products. I'm in love with your utensils, knives, ladles.. khunti, belan chatu. The background music, it's tempo. The way of cooking is amazing, but the presentation is marvelous. This is one of my fav daals but never could get the taste quite right .. tried it out since I had some fish head lying in the freezer omg turned out so well!! I am sure it would have tasted even better had I been in India with all the live fish readily available

This is Muri Ghonto. In Bangladesh however we don’t put in tomatoes or dry red chillis. We also cook this entirely with ghee . The spices we use are somewhat different too (some overlap). The finishing is different too - with beresta sprinkled on top.

I watch your videos because they have a calming effect on me. You have beautiful presentation as well as delicious recipes. You guys should seriously consider making Food ASMR videos. Without background music, just the sound of cooking. It would a visual as well as an auditory treat.

Amar thakuma always ghee-ey piyaz bhaja diye garnish korto. Also instead of using slurry - macchar mathar shathey dal-o koshey niye sheddho korto. That way the fish and the dal get time to know each other. Easy way to cook dal on cooktop is to use filtered or distilled water. Cooks in about 15-20 mins.

বেশ কয়েকদিন দিন ধরেই ভাবছিলাম যে মাছের মাথা দিয়ে ডালটার রেসিপি টা একটু তোমাদের থেকে পেলে ভালো হতো। এমনিতেই ওটা প্রায়ই বাড়িতে বানাই, তবুও তোমাদের রান্না দেখার মধ্যে আলাদা একটা ভালোলাগা আছে। যার তাই....... একবার ভেবেছিলাম অনুরোধ করবো রান্না টার জন্য। কিন্তু আজকে রান্নাটা তোমরাই করে দেখালে, খুব ভালো লাগলো। ধন্যবাদ bong eats, আর অনেক অনেক ভালোবাসা❤️❤️
