Yeah I have to try this one too. And the only change I'd make - half the shells to make the broth but the other half in the boiling water. Then fish em' out and boil the pasta in that water.

I always use the shrimp shells to make stock. It's always so good. And then it's not wasteful. Such a great tip.

I've never seen anyone cut the shrinp in half to go into the pasta. Great idea! And I usually just boil the shrimp shells to make a broth. Good new suggestion also! Happy Thanksgiving.

Yum! This is definitely one I'll make. I highly recommend using the shrimp shells this way. I make ATK's Shrimp Fra Diavolo using the shells to makes a quick stock. Delicious!!

I made this, and it came out absolutely amazing. Thank you Ashley. I used my favorite pasta buccatini (which probably is not the best choice for this dish) - I made a huge mess making it and eating it and it made me very happy, so thank you.

It's more efficient to de-shell them all and then de-vein them all instead of doing both on one shrimp at a time.

It is actually cheaper in MY area to buy shrimp that have already been peeled and deveined. At 85 - and a Keyboard player, I prefer those to bloody fingers. There comes an age where no matter how good your intentions, your body just refuses to agree with your brain. My hands are in constant motion now. I keep MY knives very very sharp, maybe I shouldn't be that aggressive at the Stones. I have used clam juice when I needed a "stock" though, that works well. But there is always Home made Chicken stock available as well.

I save all my shrimp shells in the freezer and make stock with it whenever need it. It makes a HUGE difference in the flavor of a dish.

Red chili flakes or some fresh red chili would be nice in there aswell. I would also add more black pepper for a big portion like that. Still a nice dish.

Before this current trend, I used to microwave shrimp shells in dry sherry. The resulting “sauce” was used in a ton of variations.

So glad she used oil to get that shrimp flavor. I’ve seen so many recipes that call for boiling the shrimp shells in water. I tasted the water an it had no flavor. Tried it with oil and had a great flavor.

Love this idea. And your stove area. I prefer to slice the shrimp lengthwise rather than crosswise to retain the shape. Then I will cook the shrimp faster compensate for the thinness. So I have already started the path to “my” version for future meals. 😁. Already in my recipe file.

Where do you get a bunch of shrimp shells? Can you buy them at a fish market or something? I don't eat shrimp very often so I don't have a lot of shells saved up. I need a lot because I want to make a large batch of lobster bisque.

You can also use a toothpick to remove the dirty veins (one on top, one in the underbelly). I also prefer to slice my shrimp length-wise, splitting them in half. They develop a nice rotini-like curl when they cook. Shrimp pasta is a staple

just made this now and finished eating although the process did not go as smoothly as shown everyone loved it, and the lemon zest makes a great game changing addition, i also decided to add some 10% cream to the shrimp sauce as i felt the volume was lacking

Don't know why everyone calls it a vain. It has nothing to do with blood circulation. Maybe just call it an intestinal tract? Recipe looks yummy. I will try this soon.

The butter added at the end of the process also give a sheen to the ingredients. Makes them shine and sparkle.

Have I found my food people? Shrimp shells have sooo much flavor! The shrimp head has EVEN more and it contains the buttery yet briny fat of the shrimp so try to use those heads when you have them!

Great vid however I disagree about the butter, zest and parsley. You can just melt the butter in at the end and add the zest and parsley as well. I wouldn't trust the butter to fully melt the other way.

I love everything about this except for cutting the shrimp (across) in half. I would've planed them in half head to tail. But this dish looks oh so yummy! Definitely will give it a try.

I’ve looked at countless frozen shrimp packages and the ones I’ve found always say Shrimp AND Salt. If anyone knows of brands or stores that sell frozen shrimp with NO salt, please let me know.

The ones with just plain salt aren't that bad in my experience, but the ones with sodium tripolyphosphate do tend to have more of a slimy texture to them. I found Costco's frozen shrimp to be pretty good quality, but they also have some salt added. Not sure about the ones in different packaging near the fresh seafood/meat cases when they're having their seafood sale every month or so, but if I remember correctly I don't think they have salt added.

@@ThreeDee912 Lots of seafood has Salt added as a preservative which is far better than other chemicals. Unfortunately finding them without salt pretty much requires you to be where they are caught - which is not likely.

Many years ago Julia Child covered how to process shrimp shells for another dish (which one I forget) wherein she used them after the pan frying step into a chinois and almost made rated them to make a stock

I made this dish with the shrimp that has the additives. My only changes was not to add any salt except to pasta. Best shrimp pasta ever.

Am I the only one that thinks making shrimp stock from the shrimp tail shell is a colossal waste of time? They have no flavour. It's like boiling fingernails. I would understand if there were heads attached.. But to asserts that the shells have a TON of the shrimp flavour is just not true... Not enough to make that effort worth it atleast. If you look at what came out of the shrimp in that cup, it's maybe one tablespoon of "stock" which is mostly the wine + some of the oil.

I'm curious to know not just how you know what boiled fingernails taste like but under what circumstances you were boiling them in the first place. Also, wouldn't it depend on who much the finger nail doner picked their nose and whether their nails were cleaned before trimming? And what about press-on nails? Do they impart a heady flavor? Do they go better with red or white wine? I have many questions about this!

But having actually done a taste test with fried and boiled tail shells (and I've done this multiple times to make sure) they have impart no actual flavour. The nail this is just a guess :) As I do not bite my nail and the thought of biting my nails gives me the same shiver down my spine as nails on a chalkbaord.
