Let’s do “From Scratch” make ahead breakfast recipes for those days of summer where you just want to get up and go! These are freezer friendly and enough breakfasts for a week with my family of 5.
GREEN SMOOTHIE:
• 1/2 a banana
• a handful of spinach
• 1/4 cup protein powder
• 1/4 cup Greek yogurt
• 2 cups almond milk / milk of choice
Add all ingredients into a blender and blend until creamy and smooth.
Makes 1 serving
OVERNIGHT CHIA & OAT PUDDING:
• 3 cups almond milk / milk of choice
• 1 1/2 cup quick oats
• 6 tbsp chia seeds
• 2 tbsp maple syrup
Add all ingredients to a container or mason jar. Stir until thoroughly combined. Refrigerate overnight. The next day stir before using for breakfast parfaits, or use by itself. Good for 3-4 days in the fridge.
Makes 3-4 servings (I doubled this recipe).
BERRY FILLING FOR PARFAITS:
• 4 cups berries
• 3/4 cup sugar
• 1/4 cup instant tapioca
• 2 Tbsp water
Add ingredients to a medium saucepan and place on medium heat, stirring occasionally, for 15 to 20 minutes. Cool before using in parfaits.
Makes about 6 parfaits using 3 Tbsp each.

SHEET PAN EGGS:
• 12 eggs
• 1/2 cup heavy cream
• 1 tsp salt
• 1/2 tsp pepper
• butter for pan
Preheat oven to 345 degrees F.
Generously grease a sheet pan with butter. Add eggs and other ingredients to a large mixing bowl. Whisk until completely combined.
Pour into greased pan. Bake in preheated oven for 20 minutes. Allow to cool before cutting and using in breakfast sandwiches.
SAUSAGE PATTIES:
• 1 package ground pork sausage
• 1/2 cup oats
• 1 cup bread crumbs
• salt and pepper to taste
• 1 small onion, finely diced
Preheat a cast iron griddle or frying pan on medium heat.
Combine ingredients in a large bowl and mix thoroughly, using your hands (it’s the best way to do this).
Use an ice cream scoop or spoon to scoop out small mounds of mixture onto hot griddle and press down with a fork to flatten.
Cook 5-8 minutes per side until fully cooked.
Will keep in the fridge for up to 5 days, or you can freeze for later use.

Love the smoothie and chia pudding ideas for breakfast, Suzanne. I need to get them into my morning routine. I love the breakfast sandwichs, too. I like to send one with my husband on his long days. Yes!!! They have been great! The oat/chia pudding has been the biggest hit in our household, and I’ve been making it on repeat! Especially with all the berries and fruit that is in season. So good!

@@gigiUno Awww, thank you! 😊 I’m sure the desert has its share of challenges. Although we are north up in Canada, it still gets extremely hot here in the summer. But we also get all 4 seasons, which we are lucky for.

Thank you for the videos. I only recently found your channel, and enjoy it very much. Your videos are very nicely done and the food looks soooo good. In the first segment you cooked your bacon in the air fryer. For large quantities, I have found using the oven and baking my bacon to be more efficient. You may have other reasons for using the air fryer, but just wanted to put this out there. Thanks again.

@@lindas.8036 Thank you! ❤️ I’m so glad you found my channel! The oven probably would have been a better choice, if I had a larger pan. Unfortunately my big pan got ruined, and the 2 pans I have are the ones I used for the eggs, so it would have not only been competing, but a messy clean up before cooking the eggs! Also my air fryer cooks bacon in 10 minutes and it cleans up so easily. It was the better choice for me 😊
