As someone who is fortunate to live in Scotland, I will try this recipe next month when raspberries are perfect. It reminds me of a traditional Scottish dessert, Cranachan. Also, i hope it works if I add whisky to the cream! 🤣

alcohol has antifreeze properties so you can't add much or your froyo will not harden

I made these and put the frozen parfait in my lunch bag which then sat in the fridge at work. By break time it thawed and was very nice. These will become part of my work lunches.

I love parfaits, they make a quick, delicious snack or breakfast. I used to stop at McDonald's when I was out in the morning and get a parfait and a coffee for breakfast. At least I did until they changed the yogurt they were using.

I love having homemade with only what I like in it :) and btw....You can cut waaaaaaaaaaaaaaay back on the sugar and syrup and still have a delicious granola.Chef John uses here :o

Don't add raisins or currents when baking. They turn into rocks, trust me. If you want them, add them to the granola after it cools.

A bit of inverted sugar (corn syrup, etc) in the yogurt will also help keep the ice crystals smaller!

I have a yogurt strainer, basically a screen insert that sits in a container with a cover. It holds a quart of whole milk yogurt (I use Mountain High) Leave it refrigerated overnight. It reduces almost by half, and the whey.drips in the bottom of the container. Makes perfectly thick Greek style "yogurt cheese". The brand name is Donvier by Browne & Co.

Idk chef Jon this looks nice but I'd rather stay in shape so what I do is, I keep my Bulgarian style yoghurt in the back of the fridge where it's coldest, and I mix some of it in a bowl with a mix of oats and seeds (pumpkin, sesame and flax), I top it off with some raisins, dried cherries , cranberries and nuts (almonds, hazelnuts and cashews, walnuts), and leave it in the freezer for 10-20 minutes. Then I drizzle just a sqirt of honey over it and it feels like the most decadent dessert ever, while I'm consuming no more than 500-600cals, if I had to guess

I am in Canada and I make my own yogurt from 2% milk. Then I strain it to get a Greek-style yogurt. I put two or three tablespoons of yogurt in a bowl and add some flax seeds and sometimes some Alpen without added sugar. Then I add fresh berries, usually blueberries or raspberries, and one tablespoon of maple syrup. That is quite enough sugar for anyone!

The amount of sugar in this dessert puts me off it, but big fat thumbs up for the granola recipe! I don't eat granola, don't think I've ever had it, but I regularly snack on all the ingredients, and just know I will love it when I make it! 👍

It’s hard to find berries where I live I am thinking I can try it with peices of mango and nectarines or peaches If you add sugar and let them sit for a while The flavors are pretty sweet and explosive

That yogurt to sugar ratio isn't the same for all kinds of non-dairy yogurt. But if you wanted to try it, mix up a half cup of yogurt with 1/8 cup of sugar and freeze it. If it freezes without ice crystals, then it will work. If it gets too hard or grainy, you might need to experiment with the proportions.

I don't see why not, apart from the possibility of it messing with the frozen texture. For example, I've had great success adding cocoa powder to random shit like banana bread and it coming out great.

Chef John, mix a little sour cream into your Greek yogurt, like maybe a tablespoon per cup. It's a small tip from Jacque Pepin that is parfait.

I'm guessing as long as there is enough air in the jar it will be fine, but I haven't tested it in a glass jar. I make it for myself and I put it in a plastic cup because that's what we have that is small. You could also try just covering it with plastic wrap instead of a lid. It might be too viscous for the air to matter. I don't know for sure.

So anyhooo...this has nothing to do with frozen yogurt...lol. Im just not exactly sure where to put in my food wish request. I checked the blog page but didnt see a spot so I thought Id ask here...in a spot with not a million comments. 😁 Randomly just now a mousakka (sp?) recipe showed up in my feed. About 15 seconds in, I thought "This looks delicious, but I know Chef John's would be perfect..." and came to find your recipe. To my surprise, there is only a 14 year old video showing up and it's labeled as a shepherds pie mousakka but that was all. My request is mousakka made by you that is a traditional style. Ive never had it, but like I said your recipes are perfect and havent failed me yet. Would love to see you revisit it so I can try! Thanks for a bunch of amazing grub!🤘❤

Chef John, I've been watching for years (love your channel!) and have yet to comment, never having thought I needed to. However today, I realized I MUST KNOW this, and probably should have asked you years ago...just about every time I see you initially "mix" something, it often appears that you don't thoroughly complete the mix on camera. I've always assumed that you complete a more thorough mixing, off camera. Today I realized though, maybe I'm a little (or a lottle, lol) OCD, and your initial mix on camera is indeed just fine and good to go as is; without a more thorough mix off camera at all. ...SO, which is it...you do indeed sometimes mix/incorporate ingredients more off camera, or I am indeed OCD and possibly, unnecessarily over-mix when cooking your recipes? Also, thank you very much BTW for the great content and work over these years Chef, you've made life MUCH tastier! Help a brother out here though, will ya? LOL

You might try asking him this on his next live stream. He generally doesn't respond to questions here. But, to me at least, I believe he keeps mixing off camera. Case in point - the granola here. He definitely mixed that more off camera. Good luck!

As shown in his granolda video, ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-zDV17k0VYYQ.html he says "make sure you mix this really well before you bake this. It has to be completely coated perfectly, so once you think it's coated perfectly, then do it for another two minutes, then do it one more minute." However he only showed him mixing for ~18 seconds. Therefore do not trust the amount of on-screen mixing time to reflect his expected mixing time.

Fun Fact: Did you know the word parfait is French for perfect? A traditional parfait is a dessert of custard or ice cream, smothered with fruit and whipped cream in a tall stemmed glass, and now you know. Cheers!✌🏼😃

Chef John: Love ALL your videos!!! I gained a full pound just watching this video!!! The ONLY two things I would have done differently would be to omit the coconut (sorry, I just don’t like coconut) and add on the top a thin layer of chocolate syrup before I garnished with the raspberries and blueberries. Frozen store bought stuff has at least as much sugar- it's seeing it made that makes me go 'yikes'! But I like sweet and rich things, so I try to make them with ingredients that are *nutritious*, not just empty sugar. This would be delicious once in a while, and perhaps after a veggie-leaning and lighter meal. 😌

GREEK STRAINED YOGHURT! the best and only, such a delicacy. Greece has some unique, healthy and delicious products. Too bad chefs like you make copy cat recipes with greek products but fail to promote the original products. Greek STYLE yoghurt' instead of Greek STRAINED' yoghurt but when it comes to .. lets say Parmigiano cheese you always use/ promote the italian original, aight?

divided by 4 people, don't forget....it's not just for one but four...so one full cup in the whole recipe is 1/4 cup for each person...and as a special treat, it would not be had every day. I assume?

I wish, but that's just way too much sugar for me. I'm looking for healthier desserts. The amount of sugar you put into the yogurt pretty much makes any nutritional value pointless.
