One tip that I learned was to keep the Ghee in a dark colored mason jar or in a cupboard as the light can affect the nutrients in the Ghee. Thanks for this video, I always have a 32 oz brown mason jar on my counter, its great for Keto coffee (we cycle in and out of Keto) but also a great taste on veggies and in so many other dishes. I am impatient though and rush the process, I just can't work on something like this for an hour. I cook closer to medium heat and the Ghee is a bit more dark amber with a darker taste too. I actually prefer it this way and I think this is a matter of preference.

Indian ghee is cultured ghee, it comes from cultured cream which forms on top of curd. Real Ghee is not just melted butter

Ghee is clarified butter, yes, but with a very special thing you forgot mention which makes it ghee and not simply clarified butter: caramelization of the milk proteins at the bottom of the pan. Pure clarified butter can't have that at all and it's a huge nuance. Ghee is basically clarified butter with a nutty flavor to it, so in order to get it, you *have* to let some of the milk proteins caramelize at the bottom of the pan, as opposed to pure clarified butter where you must not let it do that at all. Just clarifying ;)
@EvolutionWendy

Hahaha! :I should have clarified" 4:10 My amateur technique is, bake ghee in a slow oven for several hours -- until a nice amber color develops.

I’ve never tasted ghee before. Someone please tell me what it tastes like, how it’s used, and why use it vs regular butter. Thanks
@shdjs
@shdjs 2 года назад
It has a slightly nutty flavor. Use it just like you will use oil or butter in cooking. Big advantage - no need to refrigerate and it does not smoke and burn like butter in cooking. Ghee can handle higher cooking temps.

Thank you so very much for this recipe. I love Ghee! Not only was this extremely interesting but it was so helpful in so many ways. With the economy being as bad as it is every little penny counts. Everyone is looking for ways to reduce overall spending. It saddens me to think that many children go to school hungry. I always enjoy watching your shows. Thanking you so very much.
