Thank you so much. Just what I was looking for. PS. If anyone has difficulty handling shaping/handling the soft dough pocket, you can toughen it up by ever so lightly cooking it before cutting it up. The way to do it is place it in a gently heated griddle/tawa and take it off as soon as it changes colour. Do not flip it over or allow it to brown. The idea is to stop the dough from being too flimsy to handle without cooking it all the way through. Then seal the pockets firmly with a loose glue made of flour and water. That’s because water alone won’t be sufficient to seal the semi cooked dough.

Hi, will I still get bubbles on my pastry if I use this technique ? ideally I want a pastry which is crispy and has bubbles like in the video but mine did not turn out like this.

@ Sof I cooked the pastry and the samosas were still crispy & had the air pockets. I didn't cook the pastry for too long. Only cooked 1 side and not long.

Thank you.😊 I tried this dough recipe yesterday and it was perfect. So easy to make the dough. (I slightly cooked the dough so it was easier to handle). Made these for iftar, family loved them. I usually just buy the ready made pastry packets. Will definitely make these again.

This is exactly what I’ve been looking for! A lot of places I go to use springs roll wrapper and it’s terrible! I love the wrappers that have the bubbles in them because it tastes the best! And it has to be deep fried. Not the smooth spring roll wrappers that are baked

Can you freeze the samosas? Most recipes I've seen they cook the roti lightly first, why is that ?

Semi cooking the roti first makes it easier to handle because it toughens it a bit. But if you do that, make sure to seal your samosas with a glue made of flour and water. I find water alone isn’t sufficient at this stage. And yes you can freeze samosa and even freeze any left over pastry for next use.

I don't make them often but i've tried thrice followed different recipes. Mine turned out really soft not crispy.I am not sure where went wrong. Can i ask why do you use baking powder? Some other recipes recommend two table spoon of ghee and yours five?

Honey198001 There are many types of flour at INDIA grocery stores. I would ask NON GUTEN BAKERS for substitutes flor pie crusts or egg role wrappers and you will get close. LOVE

Could you show us the cup size and the tablespoon size or in grams?They say make firm&hard dough but when you roll it it's so hard and requires a lot of effort. I didn't know samosas dough need baking powder too. If you check all the other samosas recipes on youtube doesn't say baking powder. I make nice samosas but too soft never crispy why?

I use standard measuring cups. not tea or coffee cups. I didn't use gram for this, and I can't tell about others recipe. this is my own recipe for a crispy crust.

baking powder makes them puff up abit, that would help the dough crisp up better. (not positive but that is what i think)
