I don't understand the comments. This video is great, the automatic lowering of the music when you talk is great and works well (it's a bit funny when a clack reduces the music, as if it was an important sound). Thank you for this. Can't wait to try! Keep it up

Thank you for your comment. In this particular video, my pinned on lapel mic failed to record, and I had to use the backup sound track recorded from the camera. This is what some are referring to...whilst we are just delighted that people are viewing our videos ;-P . Let us know how yours turns out!

Thank you for this! All the sf chocolate recipes I've tried so far for my diabetic hubby are dark. Those seem to be the most prevalent recipes out there, unfortunately. So I'm looking forward to trying this. I would like to mention, however, that with your beautiful accent, soft voice, and the somewhat loud background music, I had a very difficult time understanding what you were saying. But with you putting some of the information on the screen as well as repeating info and showing the steps, I think I was able to get the gist of it. Looks pretty easy. I tried to go to your website, but the link didn't work. Thanks again and God bless you and your family.

Hi There. I am sure coconut oil would "work" with the same measurements, but it won't get "hard" with a snap. I suspect it will be more of a oily, fudge like finished product. The thing here that make it hard, as with any other real chocolate, is the cocoa butter.

If you temper it correctly like in the video, no. Chocolate only melts at room temperature if its not tempered.

Can you use any brand is sweetener?

I don't think the sweetener actually does anything for the recipe other than making it sweet. If you can substitue 1:1 for the same dry weight, it should be good. If you are using a more concentrated sweetener, you may have to adjust the ratio's... you will have to try and let us all know what you came up with!

I made this with mostly Xylitol but a bit of Erythritol. The texture was not great (too crystal like). Maltitol would fix this but it’s not keto. I’m planning to try using Allulose which may be a better texture.

Hi there. For me it makes the most sense for this as it "is a sugar, just not a traditional sugar. I.e., same volume, melts when hot, and crystalizes when cold... It works well for ratios and volumes as a 1:1 replacement for sugar.

I am not sure what you are inferring? Xylitol is "alcohol" sugar, but not insulin triggering.
