DATES WALNUTS CAKE

PREP TIME: 35-40 mins
COOKING TIME: 30-40 mins
INGREDIENTS:
FOR SOAKED DATES:
• ½ cup dates (deseeded)
• ½ cup milk
FOR CAKE BATTER:
• 1/3 cup water
• 1/3 cup jaggery
• 3 tbsp oil
• Soaked dates.
• 1/3 cup wheat flour
• 1/3 cup maida
• 1 tsp baking powder
• 1 tsp baking soda
• 2-3 drops vanilla essence
• 3 tbsp walnuts (chopped)
• Oil for brushing the tin
METHOD:
FOR SOAKED DATES:
• In a bowl take dates add milk and soak the dates for 40 minutes.
FOR BATTER:
• In another bowl add water, jaggery and mix till jaggery dissolve.
• Further, add oil, soaked dates with milk, whisk this well.
• Now, sift in wheat flour, maida, baking powder, baking soda and sieve the dry ingredients.
• Then, add vanilla essence, walnuts, mix it with cut and fold method.
• Now brush the cake mold with oil, line with butter paper.
• Pour the batter, spread it evenly.
• Bake the cake at 190 degree for 25-30 minutes.
