I just made this for dinner tonight and it was SO DELICIOUS!! My husband and brother just raved about it. It’s definitely going to be a regular meal in our house. 😋

Ah! My mother (who’s Hawaiian/Japanese) from Laie always blamed my DAD (from Utah) for that wayyy carb heavy meals with BOTH potatoes AND rice. So yeah curry beef chicken or pork with potatoes (lots) and lots of meat “token” carrots served over white rice. Oh my potato pieces are a lot bigger. It’s not only your recipe there’s one (my favorite) is boneless country style ribs (no onions or carrots) and potatoes using the preserved dry black beans as flavoring so it’s a stew served over white RICE. Everyone thinks is so weird and carb heavy and she always said “blame your Father” who passed when I was like 11 so yeah not HIS fault. I swear when her mother visited (Hawaiian) she’d add macaroni salad with those meals too but complain “too much meat and potatoes” lies all lies! I use a pressure cookers lol
