Citrus-Dijon Salad Dressing
Ingredients:
1/4 cup vinegar (can use your choice of apple cider, balsamic, white or
red wine vinegar, or a blend in equal desired amounts.)
2 teaspoons Dijon mustard, to taste
1 clove garlic, smashed or finely chopped
1 tablespoon fresh lemon juice *& it’s zest
1/4 cup olive oil (can use grape seed or avocado oil, as desired)
Sea Salt & Fresh Ground Pepper to taste
*Include the zest of the lemon to the dressing for added zing!
Preparation:
Combine the first 4 ingredients to a blender, food processor, small
bowl, or mason jar w/ snug lid and blend/shake well. Add desired oil
in steady stream while blending, shaking, whisking, or processing until
emulsified. Add increments of desired salt & pepper to the dressing
and taste with a piece of lettuce. Adjust seasonings to taste and enjoy!
