Very well said. I truly believe that this gentleman needs to have his own channel. To be honest, I like Jeff’s videos better than Kyle’s. Sure Kyle’s knives are amazing, and are incredible “Art” knives, and while Jeff’s knives are of a high level, they are still knives that one could use on a daily basis. Knives are to be used, not put away in some drawer.

The true secret is in how those billets get oriented. Those patterns are 1 major component of the blades value.

Yeah this family really looks like they were born into the lap of luxury. Open garage. Having to complete the finish process for their knives in the kitchen sink. That's how true craftsmanship comes about. Just born rich with no skills, planning or sacrifice, obviously.

Absolutely gorgeous work in every detail. I was initially surprised that your client wanted such a thick blade, but it got me think thinking about my own vintage collection and that in the distant past, very thick butcher/chef knives were quite popular. I have collected and restored a few antique examples, and they are beautifully shaped and tapered, but overall much thicker than the typical modern chef knife. And perhaps that was the vibe your client was after. Also, kudos to you for being equally willing to let your granddaughters paint your nails or show them how to forge steel. Gotta say, the gradual erosion of your nail paint throughout this video was a joy to witness. We could only hope that every father and grandfather out there would do the same for his daughters and granddaughters. Nicely done. I have subscribed and look forward to seeing more of your videos.

just as a correction, this is not damascus steel, damascus steel is a crucible steel. this is the fold-forged method. it is a watered steel blade, but not damascus steel.

over the years i've watched several knife builds, many demascus, many top japanese knife makers, and i have to say, yours are twenty times better. worth every penny. i would love this knife.

I worked in restaurants as a cook and chef back in the 1970s. A lot of western cookery comes from France. What is now called a chef knife was then called a French Knife. This shape is not German. It goes a long way back. What is interesting is German metalurgy used in making a French Knife.

Amazing piece of art. That grind was most impressive for me. To pick a favorite aspect of this one is a lesson in the futility. Impressive Damascus but then, it always is from your pieces. I feel like this is a master class on how to make those canisters perfect every time.

I have a collection of patterned forged kitchen knives. They are functional as well as beautiful to look at. It is interesting to watch how such a blades is forged. The knowledge of the forging and tempering are one thing but the ability to repeat as much as is possible the blades pattern just amazes me.

Have you tried using a cup grinding stone in your grinder to remove the scale? I have found that a 24 grit stone makes quick work of it. The stones last so much longer that they are much cheaper in the long run compared to regular grinding wheels.
