Becky to the rescue!!! I am doing a pantry challenge to stay out of the grocery store. I made zucchini chicken kale ricotta pasta skillet. I had raw milk and veggies. I'm harvesting onions wave 1 right now. I dehydrated the onion tops. Wave 2 will be pesto!!!!

Actually got you in time this post just want to say I love your channel sometimes I'm up all night watching you. I don't sleep that good, I told my husband we should start canning our stuff out of the garden, we don't have any it's full of beautiful flowers and plants, you should have seen the look on his face. I had to own up and tell him the truth, I was only kidding. He's nearly sixty five and I've just hit sixty plus The garden we have is beautiful you have a little road outside then the sea. But I wished I found your channel Thirty years ago that would have been great doing what you do. I honestly think it looks like you have been doing this all your life and by the way I know you were far to young to have been doing this when I was younger. Loved all the pestos! I was really surprised you discarded the oil from the sun dried tomatoes- it is lovely olive oil with so much flavour in it!! When I open a jar I always use the oil to cook with, it’s like liquid gold and it would’ve given your pesto even more delicious flavour! (Use that oil not only in your pesto but also to cook your chicken and vegetables!)

It really depends on the brand of sun dried tomatoes. Some used cheap oil and it really needs to be tossed. I have learned that it is vital to always read the labels. Even brands I have used in the past have changed ingredients.

Tip: Rubbing alcohol on a cotton ball or paper towel will take permanent marker off of your used jar lids so you can relabel them. It will also take the factory “use by” dates off if you reuse glass condiment jars too. Mayo., pickles, etc. I keep a bottle of rubbing alcohol in my kitchen just for that. 👍🏻

Just finished an epic pesto weekend myself! 42 jars of basil, 16 of garlic scape and 14 of parsley PLUS a few of garlic scape and parsley together, which is SO GOOD! I had never done parsley pesto before ..its my new favorite! Who knew? I use pesto in just about all my winter dishes so am so glad to have a two year supply! Try it, you will like it!

Thank you, Becky! A friend uses muffin tins to freeze garlic scape pesto, pops them out/into a freezer bag to grab and throw into individual pasta dishes, stir fries etc. I thought it was genius, so passing along.

I freeze mine flat in lg freezer bags and just break off chunks when needed. I also do not use cheese or nuts. I make ‘pesto’ with each kind of herb I grow in the garden with the herb, salt, lemon juice to preserve the colour, and olive oil. This makes it much more versatile and I can use the herb flavours in more recipes.

If you aren’t a huge fan of the texture of pesto but love the taste get a NutriBullet decrease the oil and add some hot water till its a texture you like and its a smooth creamy sauce and freezes really well :)

I made my own sun dried tomatoes with a bunch of large cherry tomatoes from my garden. I just sliced them in half and filled my dehydrator trays with them. Dried for about 18 hours-ish, left them a bit squishy and then blitzed them in my food processor with olive oil and then froze in ice cube trays then bagged them up. So good!

Grew up with my mom's homemade pasta so this video reminded me of that. She usually rolled it out by hand but sometimes used a manual pasta roller. PS: thanks for always including closed captioning I really appreciate it as someone who is extremely hard of hearing almost legally deaf. They don't always work out but I know what you're talking about even if YT's automated CC said a little pepper never fruit anyone instead of never hurt anyone lol

Everclear works too. My son works at a liquor store and I've had a couple half gallons around the house for cleaning, etc., in a spray bottle mixed 1/2 and 1/2 with water. I spritz the sink right after cleaning it while it's still warm from hot water. It makes it really shiny.

Last time I had a recipe that calls for pinenuts, we used sunflower seeds. It was a feta cheese, stuffed banana pepper, and it called for pinenuts on top. It was absolutely delicious with the sunflower seeds.

Knowing how much you like to make things from scratch, I just wanted to let you know that Rose Red Homestead (Pam & Jim) have a video on their channel of making “sun dried” tomatoes with dehydrated tomatoes. I use it with my dehydrated homegrown grape/cherry tomatoes, and they turn out great. 12:58 Have you tried adding some lemon basil to pesto yet? It seems like it would be really nice. It’s on my to do list. =)

Hi Becky 🙂 Greetings from Poland 🇵🇱 Thanks to you I fell in love with the onion top pesto. At this point I have about 20 jars of it in my freezer. You have inspired me to start gardening and this year I have an abundance of spring onions which I use for the recipe. I added my own twist to it and I absolutely love the flavour. I even shared the idea (and a bucket of the spring onion tops) with my friends who own a restaurant so that they can enjoy it as well. Also, I shared a recipe for cucumber kimchi (I thought you might be in cucumber season at this point) under one of your previous videos - don't know if You saw it but I really hope you'll try it out. I discovered if you take a whiteboard marker and scribble all over the permanent marker on your lids it comes off super easy. That way you can relabel your lids. Works brilliantly on my glass jars that I use for all my baking supplies. I add used by dates each time I refill my jars xxx

I recently made my second round of basil pesto for this season. I preserve mine by refrigerating it for a couple hours to “set up” a little and then I make ice cream scoops of it on a baking sheet and freeze it. Once frozen, I store in a plastic storage bag. The large ice cream scoop is the perfect size for most meals and storage takes up less room than jars.

You inspired me to look up a nut free recipe and will be ordering sunflower seeds that are packed in a nut free facility. This is my first year growing basil so next year will grow way more. This year I planted by tomatoes and asparagus to help with pest control.

Hi Becky, LOVE watching all your videos and you are very inspirational! One suggestion if you like to reuse the lid tops from other projects, take some hand sanitizer (cheap one from the Dollar Store - I am from Ontario, Canada) and it will take the permanent marker off and you can reuse them as many times as you'd like. Great hack for erasing permanent marker.

I’m in eastern NC. I’ve been making pesto for years and freezing it during the summer. The running joke is that I use “whatever nuts I have in the freezer”. This year all my pesto is made with pecans as I wound up with 25 pounds of shelled pecans last fall from my trees. I’ve used pine nuts,walnuts, almonds and pecans. The texture is slightly different with each nut. I portion 1/2 cup into vacuum sealer bags and press flat in freezer. Stores in very little space.

Love these variations of pesto and can’t wait to try the sun dried tomato version!!! Basil pesto is one of my absolute favorite dishes!!! Love basil so much!! I make big batches also and freeze them in silicone ice trays, so I can take out exactly what I need each time. Finally I place the cubes of pesto in a large ziplock bag and keep in the freezer. I reuse my lids too and keep a bottle of isopropyl alcohol in my kitchen to wipe the previous food labeling off. Just a dab on a paper towel takes the ink right off.

I am from Buenos Aires. Sunday is an establish day for pasta. Mi mom made ravioli, noccies and spaguetti. We are Italian descendents. I do make pesto. Basil, walnuts ( i don't like it with pine nuts). Garlic, parmesan and olive oil.I live 49 years in USA. I live in Pslm Springs CA.

Quick tip, I keep a spray bottle with rubbing alcohol next to my sink. A quick spray on a used lid or a reusable freezer bag and the permanent marker wipes right off!

Look up “mercury ball test” it’s a method of heating up your stainless steel pan before cooking so that it becomes practically non stick if done correctly. I make pancakes, eggs, etc on my stainless steel. It’s a game changer

I wanted to tell you that yesterday I used some of the Sundried Tomato Pesto you made here (that I had frozen from last years basil harvest). I used it on a small Naan bread and then added cooked chicken and mozzarella cheese. Cooked it in the oven and it made the most amazing personal pizza for my lunch. Wow! I will be doing that again. Thank you! Also I’ve made the pasta dish you put together here (but didn’t make my own pasta) many times since this video. It is my favorite meal I now make a lot. I love basil pesto. But I really LOVE the Sundried tomato basil. I’m yet to try the onion top pesto as I’m not sure when to harvest the onion tops. It’s my first year growing onions and wasn’t sure if it hurts the onions growth if you harvest the tops before you harvest the onions.

Olive oil actually has a pretty low smoke point. Avacado oil has a higher temp and would be a better option. Just food for thought.

I was just telling my mom I wanted to make home made pasta and wanted a kitchen aid pasta maker. So keeping my eye out on market place for one. I’ve been inspired to make it ever since I watched you make it at your old house and laid it all out on your dining room table and extra table to dry. I’m 56 yrs old but I have learned so much from you. I even found a set of those wooden spatulas you cook with on Temu and immediately got them as as they made cooking look so easy the way you use them…. Thanks for inspiring this older lady!!

I make a lovely dairy free pesto with nutritional yeast to give it the cheese flavor. I don't add oil and I freeze dry it in little cubes. I absolutely love it and I don't miss the oil at all. The other ingredients are just cashews, basil, garlic, and salt. So yummy!

Well that was 40 minutes of viewing pleasure! I really enjoyed your video and the making of pasta. I’m prolly too lazy to ever do that (perhaps when I was younger I would have), but last night I made basil pesto and put in the freezer. Never made it before and never eaten it either so it’s about time. I was looking for a way to prepare a pasta/pesto dish and this looks incredible. And I wanted to use some of my ripe tomatoes so this kinda nailed it for me! Thank you.

Becky if you pinch off the little flowers from basil as it grows you'll get fuller basil planrs they also grow great in Containers. Mine grow up to 2 ft

I loved watching the pesto making. I have never made onion pesto, I will have to give it a try. I am making traditional pesto from basil we grew in containers. When I make pesto, I put it in silicone muffin cups. I put those in the freezer and when they are firm, I pop them out and put them in a freezer safe container. It is the perfect size for 3-4 servings.

I love basil and preserve a lot in pesto also. Being a single person, I freeze it in 1 cup portions, but also in ice cube trays. They are about 1 tablespoon each and is the right amount to throw in a cube or two in saute'd veggies or if I am having a lazy lunch of canned soup. I am definitely going to try the sundried version!

Hi Becky! Love Love your videos! If you want to get the sharpie off of your canning lids, all you have to do is draw over it with dry erase marker and then wipe the marker off. It should lift the sharpie and wipe away together! let me know if you try that and if it works for you!

Hi Becky! You can substitut the nuts in pesto with sunflower seeds to. Choose is you want them roasted or not depending on flavorprofile on the pesto. We make "Nesto" of the first tender nettles in the spring, as cheese we take a local cheddar and we take wild ramson instead of garlic. We use a local rapeseed oil, salt and pepper. I have also tried pea-pesto but that I want warm/luke warm not cold on pasta and I prefer it chunky.

I find that unsalted cashews which I can get at my Costco are a great substitute for pine nuts because they are crazy expensive in Canada for sure !

I made carrot top pesto last year, delicious. With all my carrot tops, I thought instead of not using them, I would try this out. Fantastic. I froze some tops. I also dried some tops, for soups and such. Waste not want not. 🤗❤️

That was a beautiful pasta dish, so true we eat first with our eyes! Please get a new dough hook for your mixer, the plastic coating is chipping off and tiny flecks go into your foods. Take the model number of your mixer, Amazon has them. Your garden is gorgeous! Blessings Jan

That Looks Perfecto Becky! You work too hard. I love it when you can make a dish that is homemade like that. I'm busy working in the garden too so I had to watch this is 15 minute increments. I have never made pasta and I don't see myself doing it this time of year when my kitchen is consumed with fresh produce from the garden. Preserving all the goodies right now. Josh is a lucky man having a wife that can spend all day making a great dish like that.

I right away made sundried tomato pesto. I had dehydrated tomato, worked really well after rehydrating, I added almond as a nut. So tasty, will be my dinner tomorrow. Thank you, love your vlogs. 😊

Have you tried spinach and basil pesto? The rest of tje ingredients are the same - nuts, parmesan, garlic, olive oil... Thats one of my favorites 😍 I am so sad that onion tops season ended here, they are already dried up (Croatia), but next year i will be making that for sure! Thank you for inspiration ❤

So jealous!!! No humidity...less disease...we WILL definitely be trying the sundried tomato pesto. I would LOVE to see how you sun dry your tomatoes since humidity is less there. I'm always learning from you. Thank you Becky. Temp outside is 89°F yet feels like 100. Got to love humidity.

Becky, I saw someone bake garlic heads the other day and remembered your small garlic heads which you left unpeeled. Just take the outer leaves and bake them, the cloves will simply pop out and you can use it n sauces, with butter, olive oil, you name it!!!

If you want to make some sun dried tomatoes, I recommend making a batch of semi-dried tomatoes and putting them in olive oil. They are divine on a fresh piece baguette or bread and would be a perfect snack eg at barbecue parties.

When you have a glut of mint, try mint and macadamia pesto. Basically the same recipe as basil pesto, but using macadamia oil is a bonus, and I use lime juice rather then lemon as I grow limes.

Becky! For your kitchen aid I’d look into stainless steel attachments, I’ve had those white ones and the paint chips off into your food! I noticed yours is already chipping (mine did after 1 month of use). I bought mine on Amazon, great investment.

New video came in just in time for a break in the kitchen. I have a pumpkin breakfast casserole and granola in the oven (both your recipes) and am waiting to put in blueberry-pineapple muffins. I have put up so many meals this past couple weeks in the freezer. Thanks so much for the motivation. I so wish my city would let me have my own chickens. I am going to be sourcing them very soon.

Hi Becky , you can also use the squash flour to make Quesadillas with mozzarella cheese and the tortillas just try use everything that your garden gives you just a suggestion.

Becky you're great at that stuff personally i wouldn't no where to start. I've had to give up with most cooking, because ive got rheumatoid arthritis now for nearly thirty years. I would say my husband or my son do most of the cooking if my hands aren't to sore i will try to make somethings but everyone watches me because ive spilled a lot of stuff over myself. But im lucky at least i can try and so many people can't even cook. I get my husband to watch you. All the best Jean.

hi becky, you probably wont see this, but thought i would let you know you can use a dry erase marker and write over the sharpie marker then wipe it away. it comes right off! hope that helps! Candi and Kevin

Hi Becky, I noticed one thing about your sauce on your pasta. The extra sauce save on the side because the pasta might dry out it helps in the end.

Becky you have bench scraper, you need to use it to scoop out your chopped thing from the cutting board to avoid more mess and wasting them from just falling to the floor while trying to put them in the pan! 😂

Hi Becky. I recently found your channel and am loving watching all your videos. I just watched this one. The pasta you made that is wider than fettuccini is called tagliatelle. Also, you may find you may like the texture of your pesto better if you don't add the cheese or the lemon juice before you freeze it. Add them fresh and mix them in before you add the pesto to the warm pasta. :)

There’s nothing like homemade lasagna noodles in lasagna, so silky (my recipe has a touch of olive oil in the dough)! *Another tip when cooking in stainless steel or cast iron is to heat the pan “dry” first, which swells or melds any textures together. After it’s good and hot, then add your oil. Once you see the ripples in the oil (should be immediately if skillet is hot enough) then add meat. Done properly, it’s now non-stick!

Becky, thanks for this video. I was making pesto yesterday and decided to try tomato and basil pesto, only by using my dehydrated tomatoes from last season. I just made regular pesto, and threw in a large handful of dried tomatoes and some extra oil. Oh my goodness. SOO delicious!May be our new favorite!
