OMG….. Becky you have to make corn relish! I made it last year and everyone loves it. YOU are the one that got me started canning again at 75. This year I have already canned strawberry jam and peach jam, peaches for cobbler or pie, 18 pints of tomato sauce, potatoes, green beans. I have frozen zucchini, corn, raspberries and enough meats to last us for months! Thank you for giving this lady the motivation to start again. I have to use a mobile scooter as my walking is extremely difficult but I just tell myself “Becky says you can do this”! Big hug……. (I placed my recipe in the comments of this post, click on my name and it should come up).

@Acre Homestead Becky, I've been a cake baker/decorator for over 25 years and I've always used this "Cake Release" recipe. I always made huge batches at once but will reduce it to make 1-1/4 to 1-1/2 cups. It will keep in your fridge for a very long time so i know you will use it all before too long. The recipe is: ● 1/2 cup All Purpose Flour ● 1/2 cup Oil ● 1/2 cup Shortening(or leaf lard) Mix together well and brush on your baking pans with a pastry brush generously, but not too much. It works like magic every time. Please let us know how it works for you. I'll be thrilled to see you use this recipe. ❤

My granddaughter is 21 and has special needs. Whenever I’m at her house she always asks “does Becky have a new video out?” I love that you always say welcome friend as if you are talking directly to her. We watch all your videos and are so excited when a new one comes out!!

Hi Becky, In Germany we make cakes in this kind of pan all the time and you don’t need anything to put in it before the dough, you just need to let the baked cake cool completely before release it. I never had problems when I let it cool fully… (because as it cools it shrinks a tiny little bit and the „crust“ gets a little harder and comes off more easy. Also you could try to just put it bottom down on the counter while it cools and the „condensing water“ will losen it for you. If you have after that still problems some people use ground almonds or other nuts to dust the pan… they don’t dissolve and get integrated in the dough like flower does… I hope that help’s without you having to make some „bake magic“ put if so: this actually works quite well too. :) Love your channel! I have to say this because I am of the school 'Make do or do without' . You can use any big pot with a good fitting lid as a steam canner. Use the rack from your pressure canner in your 30 qt.pot to keep your jars off the bottom. You just need to have steam coming out of your pot at a good amount and start your timer. You can even use your pressure canner without the pressure regulator. Just be sure to use enough water to produce steam for however long is necessary. You really don't need another single function pot taking up precious pantry space. ❤

Love your videos... I made the faux pineapple - different - I peeled and cubed, my grands love pineapple, but this they did not care for. My daughter and I thought it tasted like pears, we liked it :) - I only used 1 cup of sugar, 3 seemed like sooo much.... so since it was a taste fail... I pureed it all up and made fruit roll ups. THEY love them and are clueless they are eating vegetables. - sneaky grandma here

Please please please use pickling salt when the recipe specifically calls for it. It is very important to use similar sized salt crystals to ensure you have the correct volume to safely ferment or brine your veggies. Accurate measurements are key to safe food preservation!

Becky, you should try making caramelized onions and freeze drying them in pucks. I know your canned caramelized onions didn't work out, but freeze-dried are amazing. You can slice onions like you normally would and put them in a crockpot on low with a little water and cook until they are nice and caramelized...the put them on the freeze dryer trays and freeze dry. You can reconstitute or use them as a topping on salads or baked potatoes or whatever you'd use them for but as a crunchy topping.

@jchai1343 I believe so, but I've never done it. It wouldn't turn out quite the same as freeze dried BUT better than nothing I'd say, so worth a try, then if it works, you can do that more!

To release a bundt instead of buying or making the spray, get a stick of butter and rub it all over the inside of the bundt pan and then get a couple tablespoons of flour in there and tap it around into all the crevices. Dump out the excess. Works everytime. Pull your bundt cake out of the oven and set a 6 minute timer release the edges and then flip. Fool proof, works everytime. 😊

You can spray with oil and sprinkle in sugar and shake it around your pan until covered. Put the cake mixture in the pan and bake as required. Flour leaves white on the cake and the sugar melts into the cake.

Love love the steam canner. I can literally get 2-3 batches done before you can get a huge pot of water to boil. They are truly life changing in regards to water bath canning. Get one you won’t regret it!

I was wondering about the time thing with a steam canner because you can't double stack in them so I wasn't sure if it is worth the investment into one. But if you can do 2+ batches in a steam canner in the same time it takes to make 1 double stacked batch in waterbath canner, then it seems worth it to me. I always hate dumping out the water - even if it is on my plants.

I switched to a steam canner this year too. I love it, no regrets. It is so much easier. I use the VKP top hat style the other style reminds me too much of a water bath canner.

I am looking into getting raised beds for next year. There’s just something about being in the dirt and plants that is healing ❤ I’m glad you find happiness in that as well!

In your Bundt pan try using shortening and then take some granulated sugar and swirl it in the pan (line how you would flour your pan). When my boys were little I made those Wilton Character Pans and I was taught to use the granulated sugar method. It worked really well

Becky: I have used a steam canner for two summers now. I have loved it so much I passed my water bath canner on to another beginner canning friend. It takes so much less water and therefore less time to process and is so easy. The baking spray I use with flour in it is called Bakers Joy. I love it too! Good luck with a steam canner.

I have a steam canner and absolutely love it. You use less water, pot is easier to move, and it doesn’t heat up your kitchen as the big pot of water does. Definitely a must have for summer canning.

I agree. Just got mine last year cause I was struggling with heavy water bath pots. It's great for small batches. For a big day of canning I use the large canning pot and double stack.

I have been using a steam canner for over 25 years. I absolutely love it! Less water used means faster boiling of water. Shorter processing times speeds things up too. Never going back.

Another fun day of watching Becky in the kitchen!! When I was taking cake decorating classes, they gave us a recipe for "goop" to prevent cakes from sticking to the pan. Blend equal parts shortening, oil, and flour until the consistency of mayonnaise. "Paint" it onto your pans using a brush--no sticking! It's the only thing I'll use for Bundt pans. Shelf stable, lasts for months in an airtight container.

I’m a big supporter of the steam canner! I can use it in my glass top stove with no worries! It uses a fraction of the water you would use in a water bath canner, and it’s so easy to clean. I love it! So will you.

Hi Becky, on cake release methods..... If you think the cake may stick - lay a wet tea towell on top of hot cake PAN while it's still inverted. Steam will release cake. A trick I learned from Granny.😊

I’ve heard you comment a few times that your elevation is much higher on your new homestead. Please make sure you check that it’s not over 1000 ft otherwise you have to add time to your water bath canning time.

I love my steam canner! I’ve used it for years and everything has canned just as well as the regular water bath canner. It doesn’t take as long to bring the water to boil and saving water is always a plus especially when in a drought!

Becky, this year, I bought a steam canner to use in place of my big water bath canner. It works for anything that needs processed for 40 minutes or less, which is most things. I LOVE IT!!! So much faster, as it only uses a small amount of,water to bring to a boil. So worth the cost!! It wasn’t much money either.

Hi Becky! Some cakes are easier to take cold than hot, depending on the ingredients. If the cake has more moisture, taking out hot can destroy him a bit. I hope this helps!

I used my steam canner for the first time today with the zucchini relish and Oh my it is amazing!!! Only 2 1/2 qts of water.. and it is really nice to not lug the heavy WB canner around!! I am in love with my steam canner!!

I bought a steam canner 2 years ago, and I never looked back! I absolutely love it. Anything you can water bath can, you can steam can at the same timing. You won't regret a steam canner. It's so much lighter and easier.

I had never heard of putting horseradish in relish before. I think I would have omitted that too. When I made squash relish, I did add turmeric and dry mustard along with pimentos and hot peppers. Other than that, it was the same ingredients you used. It’s a great way to use up all the squash!

Becky, on my Bundt cakes I always use solid crud I and then sprinkle the pan with granulated sugar. This always releases perfect and gives a nice sweet crunch to the cake. Love watching you in your kitchen and garden. Never a dull moment with Becky😊

I love my steam canner. It can't really be used for jobs with a long canning time but for the shorter canning times its great. Its not too heavy and don't take too long to heat up. I use it mostly for my jams as they don't have much of a canning time but I make a lot of it at once so its nice to get it all done quickly.

Im guessing that you still have plenty of zucchini-summer squash to come. If the zucchini-pineapple cake is a go, i recommend a total of 12 to 18 jars on the shelf. This will give you a cake or muffins once per month for a year plus a few holidays or extras. I sure could see this used as a jam substitute in some of those oat meal bakes too.

Becky, greasing my bundt with butter then adding a few tablespoons of flour and tapping it around the pan has worked well for me. You really want all of the pan thoroughly coated with both the butter and flour.

Make mock lemon pie filling with the extra zucchini. I just watched the recipe on miller meadows channel and it looks amazing! She makes lemon filling with the extra yellow zucchini and key lime with the extra green zucchini

I’m so amazed with this pineapple zucchini!! A great way to use that would be in carrot cake- so many recipes called for canned pineapple!

I switched to steam canning this year and it's a game changer. Heats up SO fast and cans like a dream so you aren't lugging around so much water and so much less water waste. Plus takes much less time to cool down between batches. Highly recommend

I don't know if it's already been said but I think the pineapple zucchini turns out better in bigger pieces. I like to use the onion chopper with the larger blade to make chunks. We use them on pizza all the time.

Hi Becky. Steam Canner is yes! I found one at a flea market for $20. It is all aluminum. An admin with my online canning group sent me instructions on using it in place of waterbath canning. Since I have had mine there are instructions for using them. Saves water, and keeps down on heating up the house! Plus it steams vegetables quickly also. Thanks for all you do. 🎶💕

I'm a double dipper watcher of u, meaning, I watch ur RU-vid channel on my tv and comment on my phone, usually rewatching part of the video on my phone!! I love how calm u are, love how ur eyes light up when u've tasted ur food, love it when u forget something or only read part of the recipe, then realize u should have done something diff!! I use a steam canner and absolutely love it! It won’t completely replace a waterbath canner depending on how long the jars must process. It’s very important to follow the process and safety instructions. This said, the steam canner is a great tool to add to one’s canning arsenal.

The Giant Pink Belgium tomato I planted turned out to be a ground cherry. A happy accident since I wasn't planning to give them space in my garden. Now that I've tried them and like them, I'll grow them again. This time on purpose. Also, last year I planted poblano peppers and I'm pretty sure they were actually shishitos. QC at the seed companies is not what it used to be. ~ Lisa

Research Cake Goop. It is a mixture of flour, shortening and oil. It is easy to use, everything comes out easy and it can be stored in the fridge. Great stuff!

Peel your zucchini and it will look more like pineapple. Also cut in cubes . It tastes great

Ah, good to see a new video. Can use some calmth from you since I just discovered phytophtora infestans on my tomatoes after a very very wet summer (in the Netherlands). It was almost inevitable but still hurts my heart since I only had like 20 tomatoes.. Not much to preserve here..

The cake will come out better if you let it cool all the way off and its firmer. It’s kinda like with bread. It still cooks when you get it out of the oven, and when you cut it and let the steam out it collapses the dough and makes it gummy. If you want it warm it’s best to reheat it

This cake problem was chasing me for a long time but finally I find the secret just try to grease your bun pan with butter and after you bake it just leave it to rest and come to room temperature then flip it and it will never stick again!💗

When you spray the pan, use a pastry brush to make sure all the pan is coated. It looks like maybe the oil missed some spots Very informative video as usual xx Thank you Becky

She's at a much higher elevation now and in the PNW, we already have relatively cool nights in summer. I think her heat lovers will be less happy and her cool crops more happy. I'm near her at half the altitude and the cool evenings are my struggle on heat loving crops.

That just feels childish and insecure to me. Many professional TV cooks use the same presenting style, even if it has gone out of fashion in the last years. So there is noting unprofessionell or weird about it (to paraphrase your comment from two months ago). If you don't like IT, don't watch. If you have nothing kind to say you can just say nothing, but maybe that is confusing to you.

If she is not professsional then I don't know who is. So you are wrong. I took your comment personally as far as you were adressing me. You were and continue to be condescending and rude. LOVE LOVE LOVE my steam canner. Less water wasted. Quicker and safer. I was always afraid of moving my big pot of hot water. I feel better not using so much water. Becky it's a MUST since you are canning so much. Bought mine 5 years ago and would not go back. Thank you for yr vlogs👍

Do you have a mic right near your bowls? The mixing noises are so off putting. Been watching for a long while and those mixing/slopping noises are so loud that it renders the channel useless for those who use the channel as familiar background noise.

I love my steam canners!!! We received one as a wedding gift in the 80's and it's still working great. I picked up a second one at a thrift store. I also have a traditional water bath canner. When we have heavy canning days with my family, the camp chef is also pressed into service. LOVE this time of year!!!
