Hello i could not get the ratio of water and malted barley, how much water and how much malted barley to produce the mash? Thank you

3 pound grain per gallon. 20% needs to be malted for starch conversion.

Is there a benefit to using a malted grain vs amylase?

The flavor of the malted grains carries over better. Malt and amylase both convert the starch to sugar you just get the added benefit of the flavor of the malted grains when using the malt.
