Making chocolate covered raspberry marshmallows - Simple and easy!

Marshmallow recipe
Ingredients:

🍭 130 g raspberry puree
🍭 1 tsp. pectin NH
🍭 30g sugar (1)
🍭 70g sugar (2)
🍭 25g protein
🍭 70g water
🍭 10g agar strength 900 (it’s better to take it) or 50g Kotany agar
🍭 200g sugar (3)

We immediately prepare culinary bags with a nozzle and a silicone mat or parchment on which we will plant the marshmallows.

Preparation:

🌸 Put the puree on the stove and bring it to a temperature of 40-45°.
🌸 At this time, combine pectin with sugar (1). Add puree at 40-45 degrees.
🌸 Bring the puree to a boil, cook for a couple of minutes, then cool completely in the refrigerator.
🌸 When the puree has cooled completely, put it in a mixer bowl, along with sugar (2) and protein. Set to beat at maximum power. The mass should increase 3-4 times, become fluffy, light and stable.
🌸 While whipping, put a saucepan on the stove, send water and agar-agar there. Bring to a boil and immediately add sugar (3).
🌸 Cook until 110° or until the syrup stretches like a thread.
🌸 By this point, the protein-berry part should be completely whipped. We begin to pour syrup into the mixer in a thin stream, without reducing the whipping speed.
🌸 Marshmallow mass is ready. Now we transfer it into culinary bags with a nozzle and place the marshmallows on a silicone mat or parchment.
🌸 Usually the marshmallows should sit for at least 12 hours, but if you did everything correctly and your agar-agar is of high quality and strong, then the marshmallows are usually ready in 2-3 hours.
To make chocolate covered marshmallows:

200g dark chocolate 54%
30g cocoa butter

If you want a strong, crispy glaze, then the chocolate needs to be tempered.
