Pea and ham soup recipe
One unsmoked gammon joint
1 white onion chopped
1 ham/veg stock cube
1 box dried peas
Soak peas overnight as per instructions on the box, then rinse in cold water and keep to one side in a bowl, with water till ready to use.
Put gammon joint an onions in slow cooker with 2 pints of water, turn to high, put lid on and forget about it for 6-8hrs.
Take the joint out and cut or shred it, whichever you prefer. I keep half to one side for another meal. Tip the liquid into a jug, and measure out one and a half pints, pour it into a pan, add your stock cube and drained peas to the liquid, bring to a simmer, put the lid on and let peas cook for approx 30mins, or till soft. Once the peas are cooked to you liking, your can liquidise if you like, or mash with a masher, add your cooked ham, and your soup is ready. Sometimes I like to liquidise half, then add the remaining peas for a chunkier soup. Enjoy with some nice crusty bread, or croutons, yum yum. Both the ham and stock cube are salty enough for me, I never add more, but if you like, you can add salt and pepper to taste after soup is cooked.
