That makes sense Dale, pounds of peppers versus an amount? Pepper relish is so yummy! Great job! Another lovely harvest, and canning vid! ☺️🌞🙏🏻🕊🙋

It is quite hot but I think it looses some of it's heat when it is cooked.

Thank you for the recipe. I am from Germany and those Relish's aren't very popular here. I grow my own peppers in my garden and you gave me another idea for what to do with them. Thank you :)

Thanks Dale. I use alot of Celtic sea salt in meals. It is of a gray moist texture and it naturally contains iodine, plus a lot of other goodies from the sea.

This reminds me of a story I read some years ago about the history of Indian Relish. At one time there was a question of the origins of the recipe. Some people claimed the recipe was American and others claimed it was from India. It turned out that the recipe had traveled from America to India by way of English colonial officials who had received the recipe from friends or relatives in America. When these individuals returned to the UK they took the recipe with them. At the same time, the recipe had traveled the more direct route across the Atlantic from America to the UK. So it turned out that both claims have some merit. I believe it is even sometimes referred to as India Relish.

Thank you Mark that is very interesting I don't think I have ever seen Indian Relish here.

It definitely has heat but I always think the cooking and canning process reduces it. I have friends who would think this would blow your head off and others who would say it is mild.

I will put this on my to do list - I like hot chili peppers especially the jalapeno variety and may add some tomatoes to the mix and cut down on the sugar a little as I don't care for too much sweetness, anyway I am not sure how you would rate this as we all have different tastes concerning sugar levels - Kind regards - Phil
@DaleCalderCampobello
@DaleCalderCampobello 7 лет назад
Thank you Phil it isn't overly sweet at least to my taste I think the sweetness balances they heat.

Good way to use the Hot peppers, my Espelettes are all very Hot now, I love the flavor but they are too hot to eat raw. I will send you some Doe hill pepper seeds they are very similar to the Mini yellow bells very sweet thick skinned, would be great stuffed with something savory, they are very Moorish. :-)

No pectin or cornstarch? Is there a jelly texture?
@DaleCalderCampobello

No its a relish it doesn't have a jelly texture you could add a bit of cornstarch if you wanted it to be thicker.

Question: How does cross-pollination happen or work?
@DaleCalderCampobello
@DaleCalderCampobello 6 лет назад
A bee picks up pollen from one variety of pepper and deposits it on another variety if you save and plant the seed the resulting pepper will be a hybrid which may or may not look like the original.
