Jim and Josie from Ozark Mountain Goats picks hot and sweet peppers from the garden and cans what they think is the best hot pepper relish. But if you enjoy hotter relish or even super hot relish switch it up with peppers of your choice. Be creative and enjoy!
Basic Recipe Hot Pepper Relish:
5 cups ground green or red bell peppers (About 7 to 8 peppers, or 3 to 4 pounds before grinding)
5 cups ground jalapeño peppers (About 3 to 4 pounds before grinding)
1-½ cups ground onion (3 medium yellow onions, 2.5 to 3 inches diameter, before grinding)
2-½ cups distilled white or cider vinegar (5%)
2 cups sugar
4 teaspoons pickling salt
4 teaspoons mustard seed
Yield: About 6 pint jars
Wear plastic or rubber gloves and do not touch your face while handling or cutting hot peppers. If you do not wear gloves, wash hands thoroughly with soap and water before touching your face or eyes.
1. Wash and rinse pint or half-pint canning jars; keep hot until ready to fill. Prepare lids and ring bands according to manufacturer’s directions.
2. Wash bell peppers well; trim to remove stems and seeds. Slice stem end from jalapeño peppers; grind remaining jalapeño peppers with seeds. Peel, core and wash onions. Cut peppers and onions into large pieces. Coarsely grind peppers and onions (see Notes at end of procedure).
3. Measure 5 cups of the ground bell peppers with their juice, 5 cups of the ground jalapeño peppers with their juice, and 1-1/2 cups of the ground onion, including juice. Combine the measured peppers and onions with the remaining ingredients into a large stockpot. Bring the mixture to a boil over high heat. Reduce heat and cook at a low boil for 30 minutes, stirring often to prevent scorching.
4. Fill the hot relish into prepared hot pint jars, leaving ½-inch headspace. If needed, remove air bubbles and re-adjust headspace to ½-inch. Wipe rims of jars with a dampened clean paper towel. Adjust lids and bands.

It really is. You can make it as warm or sweet as you want it. Depending on the kind of peppers you use.

Our pleasure. Thank you for watching and glad it brought back memories. The reason we started this channel was so we could record things for the grand-kids. Home cooking and canning may be important to them some day. My wife has always said she wishes she had a videos of her grandmother cooking and such so here we are. lol Glad you enjoyed! I need to get my bees going next year. I lost mine when we moved south 3 years ago. There's nothing like fresh honey!

Brian Gleason - thank you for the nice feedback and subscribing! This recipe makes a mild relish so the ”heat” can be modified to your tastes. I actually prefer it a little hotter so we increased the amount of hot peppers on our second batch. 😋 / Josie

I am going to try it tomorrow, it looks wonderful. I save and can the extra liquid from my relish and chow chow making. It can be added to all sorts of things for a splash of hot sweetness. A dash added to egg salad or mixed with vinegar for a salad dressing. A tablespoon added to rice near the end of cooking adds a spicyness to the rice. Thank you for such a super recipe.

Thank you for the awesome feedback and comments! We love this relish and just made another batch a couple days ago. It was a 50/50 hot vs. sweet peppers mixture, and it came out really great. Do the jalapeños tend to lose their heat after sitting on the shelf for a while?

Thanks for the message. Hot peppers when canned dilutes into the brine and other things. So no heat is actually destroyed, just distributed out of their natural location into others. They can seem milder at times because of this. Hope this helps and thanks again.

So ive made this twice now, following the recipe and measurements in the video, as a double batch. 16 cups of peppers once everything is chopped up, and 6 cups of vinegar, 7 cups sugar But I end up with atleast 3 cups of liquid left each time after filling my jars (9, 500ml jars) this time. Is that normal and still safe or does ALL the liquid have to be distributed in the jars equally? I use a slotted spoon when filling my jars so each jar does get some liquid/vinegar.
