take it off the heat and cover it, it'll steam itself off the pan and soften the burnt bit a little. when i make rice, i purposely leave it on high for about a minute after it's done so scorch the rice at the bottom, because that's my dads favorite part. if you do it right, the burnt part should be golden brown and slightly crispy.

Hiya! Nigerian here. Really good attempt. With jollof rice it is definitely practice makes perfect!! Next time you may want to try cooking on a lower heat, especially towards the end, with a bit less water, also maybe cover the top of the pot with some tin foil. (more like cooking the rice with steam) but generally great job!!

Both England and Scotland, with the inclusion of Wales, are situated on the island of Great Britain - so called Great because it the largest landmass in the group of surrounding islands. Britain is sometimes used interchangeably with Great Britain but I've also heard it used to describe the union between England and Wales. Together with Northern Ireland, you get the country of the United Kingdom of Great Britain and Northern Ireland. Scotland, Wales and Northern Ireland are all devolved territories, meaning that they are governed by their own parliament (much like US states). The central government for the U.K. sits in Westminster in London, England. It governs all of England as well as Scotland, Wales and Northern Ireland on matters which are not within the remit of the devolved parliaments (such as the decision to go to war or sign trade agreements, for example). Overall, just because you have family from this region does not mean you automatically understand its geography.

We are American expats living in Ghana. We eat jollof rice a lot. In fact, that’s what I ate for lunch today! Here the burnt rice at the bottom of the pan is called “rice under”. The kids love it!

Mat I suggest as a bloke from south east London, who knows nothing of African cooking, that you add the rice to the paste before adding the stock. Give it a stir with the paste while frying both together briefly, then add the stock, cover and never stir again. That way the rice will be coated in oil and has a better chance of staying separate.

Biryani style.. I can't see why that wouldn't work, sounds like a good idea. Also cooking in the oven with a lid could help with the sticking to the pan.

I watched this while near my boss before clocking in and she was like wth are you watching?? So I said it is a variety of wholesome things that are relaxing to watch. Basically told her about the foraging videos which I really find soothing. And then I talked about Eva popping into frame from time to time. She didn't really have much to say about it. And for me, that was a nice change of pace ^.^

@@papayer What would you say spreads more dirt and grit. Your shoes that you wear outside through sand, dirt, rain, mud, puddles etc. or your socks that you change every day? A door mat will take care of some of that, but I'd still prefer to leave the shoes by the door. But to each their own.

You don’t need to add scotch bonnet if your wife doesn’t like spice it’s not by force. My brother has a bowel condition and my mum doesn’t add scotch bonnets it’s still jollof and it’s still delicious. 👍🏾👍🏾

I LOVE that you do this collab. I'm a Canadian, and I NEVER miss a video because I get to see somebody simply experience life. You make no bold claims or flex your ego, you're just a good, honest person making honest, slice of life type content. I get the exact same feelings watching Babatunde's content just from a different part of the world. It looks great, Mr Atomic Shrimp, only suggestion would be to use Thai parboiled rice(It's what we use here in Nigeria), it's more forgiving of mistakes unlike long grained rice. Also, the tomato sauce base could do with a little more oil to allow the tomatoes "fry up" a bit and also caramelises the tomato a bit and improves the flavour. It's great seeing you making this, I enjoy watching you make it

Yes! I spoke to the screen when you dished it straight out of the pan. Leaving it to absorb off the heat for a bit + resisting the stir are the keys I think. I often make paella with unwashed (because I'm lazy) short grain rice, and even that keeps its grain with those two combinations. I'm loving the Nigeria/UK food swaps btw.

I love these collaborations! Thanks to you and Babatunde I have been experimenting with all kinds of things like gari & akara (I love bean cakes!).. I'm going to have a go at making this but with zero scotch bonnet! A bog standard red chilli is just fine! High five for drying out bay leaves that would of went to waste! If you have any wild garlic recipes you want to try out then now is the time because I have found the mother load and am excited to get picking!

@AtomicShrimp As with cooking rice on the stove top, letting it stand for 2-5 minutes will allow the super hot fragile grains to reconstitute themselves the rice can then be fluffed with a fork and shoveld into your mouth. I knew as soon as i saw all of that steam from the rice on your plate it was too soon to plate it. Not to mention, flavors will develope a little when they cool and sort of oxodize and marry. Thanks for the great content, and aside, you seem to have a well above average tolerance for hot pepper compared to the most englishmen I know.

I think there's actually quite a broad spectrum of tastes in the UK. Curry is, after all, more of a British dish than, say Pizza or Hot Dogs are American - that is, curry has been on our menu for centuries. There have always been people in the UK who enjoy spicy food. My own tolerance for hot peppers has gone up a bit since meeting Babatunde though.

You did a great job for your second attempt! This looks so good. As you said, letting the rice stand off the heat will help the rice grains absorb the rest of the moisture. I know some people who cover the pot with foil towards the end of cooking to help it along. I love your videos! Now I’m craving jollof. Yum!

You need to try using tilda rice (the red packet) or a long grain rice from a cribbean/Asian supermarket. I think the rice is the issue mate. Love the knowlage you share. Bless you and yours sir.

Spot on always leave rice stand with a lid on for 10 mins or so after you take it off the heat. It is the right consistency then and just the right temperature to really taste the flavour

A month late I know, but in terms of expecting joloff to taste like paella which you mentioned on your first attempt, the other rice dish that it tastes most like is jambalaya in my opinion. In fact the first time I tasted joloff a lightbulb went off and I went, ah, this is the ancestral dish that jambalaya is an adaptation of using locally available ingredients. Nigerian food is wonderful. I first experienced joloff at a party, someone showed up with a massive tray of it and it was the only thing that there were no leftovers of despite there being so much of it. I hope you keep going with this recipe exchange! I'd love to see you attempt an ofada stew, though once again you'd probably want to reduce the quantity of scotch bonnet Babatunde would use.

Hey Mike! To prevent the rice from sticking to the bottom of the pan and get a fluffy texture there is a great cooking technique that's super simple. You're most of the way there! Once you add the rice into the pot with everything else bring it to a boil, once it boils put a lid on it and put it on the lowest heat setting for 10 minutes. Do NOT take the lid off once it is on, this is crucial for the rice to have singular grain texture. After it has cooked on the lowest heat setting for 10 minutes turn it off but leave the lid on for another 10 minutes for the residual heat / steam to do it's magic. Then you'll have perfectly cooked Jollof Rice (: Easiest way is just to use a rice cooker!

My wife is Gambian and was distraught with the Nigerian jollof. She says the Gambian one is far superior and is happy give you her recipe. It's called Benachin in Gambia Although, we both agreed yours still looked tasty!!!!

I'm sorry, I don't mean to start a jollof war here, but no one country has the ultimate way to prepare it this day and age. I think people discover how best they like it, some Nigerians roast their peppers (to catalyze a smokey taste) before blending, others bake their rice part way, some the entire way, some prefer to use long grain jasmin or sella basmati rice, others still, short grain. It really depends on what works for each individual and/or household, you know... I personally don't cook mine at all like how he's done, but he's continuous attempt will eventually get him to learn a technique that he's eventually comfortable with and that's how a variation is created, I think...

Superb! Most rice dishes like this, including paella, but excluding risotto, need to rest with a lid on for 5mins. Also 100% agree on the use of butter. It's an important emulsifier, and it's the smooth liberal melting of the fats on your palette that enhance the flavour profiles of the herbs and spices. Keep up the great content!

This looks REALLY tasty. My roommate and I like making new recipes because it can get pretty boring eating the same things all the time, so I'm excited to try making it with him. Maybe we'll add this into our meal rotation if we can pull it off, it has a lot of the staples we keep around the house.

I love adding nutmeg to spaghetti bolognese or mac & cheese - but not everyone in the house does, so I keep that grinder as a table condiment

These recipe exchanges are great, I tried making jollof rice for the first time tonight, it's something I probably wouldn't have tried otherwise. Mine turned out a little unevenly cooked (I think I was too reluctant to add more water at the start in case I made it too soggy) but the flavours were delicious. I think you're right that it must take some practise. It's also the first time I've cooked with nutmeg, which I think is a really nice flavour. Although I have to admit I used fresh jalapenos instead of scotch bonnets, I'm a bit scared of them...

This is just a wonderful series! I'm a big fan of trying a recipe again and again until you get it right, especially when it's either something very traditional or from a culture outside of your own. If you'd like a different kind of challenge, might I suggest buttermilk biscuits from the American South? It's a simple, delicious recipe for a quick bread, but it takes practice to get the knack for it. I'd quite appreciate it!
