I remember joining a cooking competition back in college, the theme was WES-FIL fusion, i decided to go Filipino-carribean basically made a seafood type-filipino food with carribean flavors (wouldve used conch if it was available but sadly not.) so instead, i decided crab and shrimp (prepared similary to ceviche) filled Dynamite wrapped in lumpia wrapper, then wrapped in veggie Okoy served with sweet-Spiced vinegar along with a sweet oyster sauce based thick sauce. *(the veggie okoy wrap was a bitch to achieve btw)* as one of the judge/professors pass by my prep table, he scoffed at me and said: "Dynamite? how original" in a sarcastic way. kept my mouth shut and pissed me off in a good way that i focused even more on nailing the taste i wanted to achieve. after the dishes were served, i won *best in Appetizer* category. the comment from the judge was: "the dish showed the theme perfectly and the best part is the taste complimented the fusion. it seemed original Filipino, but new. in philippines, we have a version of ceviche called ensalada. though usually it uses shrimp paste or salted egg for flavor. sometimes we use raw mango to get the sour/tangy taste so little vinegar if not none is used. i thought since those were similar, it would be recognizable to Filipino palate. and as we usually use beef or pork as fillings, using seafood would be new. especially with the mix of crab and other ceviche ingregients. i recommend you try it, even without the veggie okoy layer. i just wated to add that to make the appearance more colorful and the dish presentable. i wish i had kept a photo of it to show, maybe when i recreate it, i'll take a photo.

Fyi, you can also add cheese on the dynamite, adds a bit of creaminess to the taste. Also you guys are correct , the veggie lumpia goes well with the vinegee and the sweet and sour goes well with the dynamite and shanghai
I guess you forgot to have a cheese stick included with the Dyanmite. its a lot better with meat, cheese and the green chili (siling haba). try it next time.
Looks poppin. For sawsawan of lumpiang shanghai, most of us just mix banana ketchup and mayonaisse. Sort of like thousand island dressing. Your lumpia looks legit and poppin. Props for the awesome cooking and video.

Siling labuyo, siling haba refers to what type of sili. 😀 I enjoy hearing the both of you speak Tagalog. You're somehow doing Taglish or Tagalog-English. Something like 'Can you make kuha me the siling haba' or 'This lumpia is so masarap' is Taglish. 😁
side tip. normally the vegetable lumpia uses the vinigee sauce while the pork filling uses the sweet and sour. You can also try adding cheese to the dynamite filling. Sometimes replacing the pork with cheese or just adding cheese to the pork filling. Side comments, to much filling for the size of the wrapper, should be half the quantity you used. Lastly I know its laborious to make lumpia. Prepare the filling, chop the vegetables mix the filling, wrap the lumpia, fry it. What we normally do is we make a lot of these. Wrap them all at the same time, place them in a container and put them in the fridge. When you want to eat them, just bring out, get a few pieces, fry and enjoy. Since its in the freezer, it will last weeks. Last tip, when frying these, fry them until the wrapper starts to get golden, take them off the oil, place them in a rack, place the rack on top of a baking tray, shove them into an pre heated oven, 200-300 would be fine, wait until golden brown. the reason why you do this is because the oil is more viscous when hot. Excess oil will drip and you wont get that ikky oily feeling when you eat it. if you have a good air fryer that will work too but its not as big as an oven.
there's another kind of lumpia that isn't fried. Try looking for Lumpia Sariwa, or fresh lumpia. Now I don't know if you will be able to find the fresh lumpia wrapper there, but there are a few videos that teach you how to make your own.
Johnny and Chloe: Want to make Sweet Tropical Fruit Coleslaw Salad? 1 can of Tropical Fruit Cocktail (remove the syrup; slice the pineapple chunks into small pieces); 1 carrot (grated); 1 small cabbage (finely sliced into small strips); 1 small pack of Sweet Raisins; half a small bottle of Sweet Pickle Relish; 1 can of Condensed Milk; 1 pack/bottle of Lady's Choice/Bestfoods (any brand) Sandwich Spread; 1 box/pack of Nestlé Cream; 1 teaspoon of ground black or white pepper. Mix it all and chill in the refrigerator. No need to cook. Eat it as a snack, appetizer, or dessert.
For Pilipinos... Cooking something in slow cook and hard process are food! The harder the process, the tasteful the food... Btw... Adding good stripe of cheese in the dynamite makes it more tastier! Enjoy!
after the salty, sour and crispy LUMPIANG Tauge, shanghai and dynamite .... partner it with sweet TURON (fried banana wrapped in lumpia wrapper ). it is a great combination experience with families and friends on simple party visit
Guys, there is another type of lumpia that is categorized on its own, that is the LUMPIANG SARIWA. ( Sariwa means Fresh ) Basically, it is huge in size, and it is not fried at all. It is eaten as a wrap, and refreshing. Lumpiang Sariwa is the "Wrap" before there were so called wraps.
Dynamite lumpia you can stuff anything but mostly meat and sometime cheese. It’s like a combo of cheese and sili haba. Any parties in the Philippines will not be complete without lumpia. And it’s always a take home food in any parties..😁😁😁 kudos to both of you guys… ❤️❤️❤️
Wow! Loved how you made not just 1 but 3 kinds of lumpia. You must also try doing lumpiang sariwa. It's basically lumpiang gulay but instead of deep frying it, you will eat it as fresh. Then partner it with peanut sauce. Also, lumpia is always in the menu for any/some occasions here in the philippines (birthday parties, company parties, christmas dinners, and others) partnered with pancit or filipino-style spaghetti.
Since you have leftover lumpia wrapper, why not try these 1. Cheese sticks.. 2. Turon with langka, you can accentuate it with chocolate or ube halaya 3. Recreate dynamite but with cheese.
If possible, I hope you can also make lumpiang sariwa (fresh lumpia).. its different because its not deep fried.. Its contains veggies inside and mostly bamboo shoots covered with sweet savory sauce... I like fresh lumpia more than lumpiang gulay so i hope you also try making it.. ❤️
fish lumpia is a lot of work, (boiling the fish with pepper corns and other spices and then de-bone it and stuff🥴) but soo totally worth it!! it's so yummy 🤤🤤🤤🥰🥰🥰
Adding a little bit of sweet potatoes and pork (sliced) to lumpiang gulay definitely puts it to the next level, also lumpias more particularly the dynamite are a good beer match! Surprisingly, I think you guys both forgot your favorite red horse beer this time ha ha ha! Cheers!!! 😋🙂😋
