Making my Son's Birthday Cake. It's a meringue this time!

My son John's birthday celebrations were delayed this year but I was determined to make him a cake as usual! This year, I found a recipe on this site
meringuegirls....
and followed it to the letter. Sadly, my cake didn't resemble The Meringue Girls but it tasted fantastic!
The homemade ice cream I made to use up the egg yolks was a triumph! I used this recipe
itsnotcomplica...
and it was really easy, you don't need an ice cream maker, just a freezer.
Please give this video a thumbs up - little Agnes has still got to learn how to separate her thumb from her fingers to do a proper thumbs up - but she did manage it at the end! Adorable!

How sweet to hear Agnes sing to Uncle John. The tips on the piping bags did not work because the bag was lower than the tip. If the tip were below where the bag was cut off, then you would have seen the effects of the tips. You could cut off the tip/end of the bag before you insert the tip. I love meringue and fruit with whipped cream. Beautiful.

I decorated family birthday cakes for years, with buttercream icing...not meringue...and as soon as I saw Kate snip off the bottom of those bags as she did, I thought, "Uh oh!" You explained the issue perfectly! Try again on this, Kate, just so you can experience the different results--those cake tips can be lots of fun!

As a cake decorator, I agree. You should had cut the bag so that the piping tip stick out around 1/8 to 1/4 of an inch. This means, when you look at the tip, pick a spot where the most inside point clears the bag. Sometimes if you cut the bag prior to inserting the tip, you may find that the entire tip falls out of the bag. So, if you do this again, you want to be finicky, take your time, pushing and pulling out the tip so it falls at the right place. Sometimes the tip pushes out of the bag when you cut too much off. Good luck the next time. FYI: your cake was beautiful!!

Great "tips" for cutting your decorating bags... here's another that might help. After your tip is placed, put your bag inside a tall glass, pulling the ends of the bag down the outside of the glass. This holds the bag while you fill it thru a nice size opening. Don't give up... Agnes may enjoy a bright rainbow 🌈 Meringue cake for her Birthday.

When I fill piping bags, I like to stand them up in a tall glass so I have two hands to use for filling, and then I can put them back in the glass to hold them upright instead of laying them down. Such a nice birthday party for John! You have a lovely family. Thanks for taking us along.

Hiya 🌞, ❤ the sunlight coming through your "stain- glassed" windows and leaving rainbows on your arm! I have a cut glass crystal that hangs off a curtain rail and it sprays lots of lovely mini rainbows throughout the house most mornings,😊 which causes me much happiness to start my day! Just love that we do similar things and love how you chat away like we're all in the same place enjoying time together ❤ l make " bombe alaska" at times( the grandees love to see it come out of the oven-& are always amazed that the internal core of icecream is still cold!) That cake looks gorgeous, I would like to make one for my husband as he is coeliac and can not have wheat , so that would be perfect. I could be wrong , but I suspect the reason the tips did not work is because the bag was lower than the tip , so you got the shape of the bag , not the tip ? That would be my guess , but it did not really matter as that cake looked amazing anyway .

I use the decorator bags for a number of things. I was such a clutz trying to fill the bag with one hand and hold it with the other. I found that taking a tall narrow jar of some sort (a pint and a half canning jar, in my case) and putting the bag inside with the top folded around the edge of the glass, made filling it so much easier. That cake and the spread looks fantastic, in any case.

Hello Kate! You are asking what it was that allowed us to find your RU-vid Channel. The “NAME” of your channel did it for me. I wondered what in the world does it mean, and how could it relate to quilting videos? I started watching your videos and you instantly became a friend to me. I love your teaching and the sharing of your life. Watching your videos with walks around the lake, glances of your gardens with soothing choice of background music, makes your videos like no other! I have always wanted to order from your shop, but overseas is intimidating. Always worried there will not be enough, thus disappointment. Very wordy comment, but long overdue. When you first showed the eggs in the carton, it looked to me as if the eggs from your neighbor's hens were lilac in color! And not until you picked up the 4th egg did i realize the lilac color was coming from your marvelous window!

Hi Kate. Your meringue looked really pretty. I'm determined to have a go as I love a pavlova. From my days of icing cakes I think the swirly piping is probably done with a rose petal nozzle. Your ice cream looked gorgeous.😊

Thanks for sharing this lovely video. Love all your posts. I’m sure that you now know (as I didn’t read comments) the reason for the tip failing to make the lovely shell-pattern. It’s because the end of the piping bag must be cut away from the tip so as to expose the end of the tip. Otherwise the mixture is being smoothed by the sides of the bag still extended at the bottom of the bag, covering up the zig-zag points of the piping tip. But such a lovely cake. I might try this one 🌸

Every year, my aunt (the most amazing baker in our family!) would make my mum her favourite cake for her birthday and it was layers of meringue with lashings of cream and I think it was almond? SO good! It looks like you had so much fun creating that cake and I love the different layers/colours of meringue! You always make amazing cakes for John!!! xxx

Keep the piping tips , the icing bag needs to be below the tip end. I usually cut so it's halfway down the tip. A wonderful cake and ice cream.

I remember the cookbooks say to keep whipping the whites in the same direction so as not to squash the bubbles you've just put in, so maybe that would help get stiffer peaks? But I haven't made meringue in ages. Looked yummy anyway! 💕💕

I learned to use a piping bag with a packet of instant mashed potato. It costs very little and it didn't take long to mix up so you aren't 'invested' in it. You can practice with it, scrape it back into the bag again and again until you are confident with it. If you try this with cream it will eventually melt with the heat of your hand.

Happy Birthday John! Whenever I am making meringues I make custard ice cream at the same time to use up all of the eggs. They also are very tasty together.

I had vertigo last November until this May. It was quite debilitating I can attest to that and I live alone as well so it was a bit scary. I am glad you are feeling better. That cake was a little like a pink Pavlova..mmmm delicious. Lunch looked fabulous as well.

Put the bag with the tip in place in a tall glass or jar. That way you can just scoop the meringue or frosting in at once

May 25 2023 320 pm. Hello Kate Im watching u everyday in my sewing room. Im 60 . My mom made those when it was cold outside and Christmas time said this is Christmas snow that Santa left to make these snow drop cookies! Yesss ! Because it melted in ours mouths. For the longest we believed ! 😊😊
