Would you swap the milk in your pancakes for blood? In parts of Northern Sweden, Norway and Finland, nomadic reindeer herders regularly make ‘blodplätter’ from reindeer blood! When the Sami people butcher a deer, they make use of every part of the animal, and blood is mixed with eggs, flour and salt to make a unique, deep red pancake batter.
Intrigued, Beryl Shereshewsky set about creating this traditional delicacy in her New York kitchen, but how did she fare?

Blodplättar Recipe:
Ingredients
- 2 cups blood (Beryl used pork)
- 1 cup water
- 2 eggs
- Pinch of salt
- Butter for frying
- Cooked bacon, lingonberry jam, and syrup for serving
Directions
In a large bowl, whisk to combine the first four ingredients into a smooth, slightly runny batter. In a frying pan on medium-high heat, let a small piece of butter melt in the pan before adding a thin layer of batter. Cook until bubbles show on top, then flip and cook briefly on the other side. They cook quickly, so be careful not to burn them. Adjust heat as necessary. You want them bubbly and puffy, which requires a fairly hot pan. Serve right away with bacon, lingonberry jam, and syrup.

In the Philippines we have a dish called dinuguan (di-noo-goo-ahn) which is a pork dish that has pigs blood that you would generally eat with rice. Personally as a someone born in North America, the dish is pretty polarizing among my Filipino friends and my siblings, but I really love it! It's sour and savoury which are flavour profiles that I love.

One side of my family is actually from there. I got to try it once and I very much enjoyed the flavor. What I haven’t gotten to try yet is the traditional thing at weddings where you kill the pig in front of the guests and then roast it. That’d be interesting. My dad no longer likes pork because of his experience with it but I think I have a far more capable disposition to hearing that happen. Can’t see anything at all.

Mexico has a blood dish too. Although, I've only seen it made once as a child. I didn't taste it, but remember my Uncle Conce put marjoram spice in it.

Great video! In Portugal we have a dish that we call "cabidela" which is made usually with rice, chicken and the blood of the chicken. You can also replace the chicken for a rabbit. Another dish we have with the use of the blood is also rice with lamprey and its blood.

I don't live in Portugal for some time now and I do miss an occasional cabidela. I remember a restaurant in Coimbra which used to cook it very well. Instead of chicken or rabbit, it is also possible to make it using lamprey, but this is considered a delicacy and it's considerably much more expensive. They use to have in more specialized restaurants.

Chilean here. There are blood sausages called prietas, which include onion and lots of spices, you boil them and serve with potatoes. I remember you could find coagulated blood in blocks at the butcher's shop. My mom cooked it with onions and spices and served it with potatoes. Yep. I haven't seen that in decades. In native tradition (Mapuche) there's a delicacy dish called ñachi (gnatshee), which is pig or lamb's raw blood, left to coagulate and served with lemon juice, dressings and spices. You eat it with bread. That one I have never tasted, it isn't a thing you find in cities. ✌

GBS used to be my favorite channel and I was over the moon when Beryl started her channel! As a total devotee to Beryl’s channel, I was lucky enough to discover that GBS is up and running again. This video was fascinating and fun, just like all Beryl’s videos and I would love to see more collaboration between y’all moving forward. After all, she was one of the very best parts of GBS before Covid, and I know her unique, personal style of videos will only contribute to the new GBS’s success and popularity! Here in the Philippines, we have Dinuguan (Pork blood stew) which is comprised of the internal organs (heart, lungs, ears, or intestine), or bite-sized pork meat simmered in pork blood. Vinegar is also added to prevent the blood from curdling.

Fun fact, in baking you can substitute a medium egg with 65g (4tbsp) of blood. 43g (3tbsp) of blood for just an egg white.

If you are into blood that much, ;) I would recommend trying duck blood soup from Poland. In Polish, it's called Czarnina (pronounced: CHAR-nina) and it’s key ingredient is blood. Mostly duck blood, but depending on the regional traditions, goose, hen, pig, or rabbit vital fluids are used instead.

ah yes, definitely blood is part of my culture. We come from a Taiwanese household and we love putting it in savory sticky rice cakes (you can pan fry these blocks, stick them in hot pot, you have it). We also like use coagulated pigs blood to braise or stirfry with different veggies :D I didn't like it as a kid (especially eating straight up coagulated blood) cuz often it was just too irony, but I realized it really depends on the quality! Mostly it's a fun textural thing, and if it's fresh enough as is you don't taste much of the iron :P

In Taiwan we have this thing called 豬血糕(zhū xiě guǒ;) it's a mixture of rice and pork blood, you can find it in hot pot, or deep-fried it's supper common and I love it growing as part of my after school snacks from the carts selling at the side of street on the way home.

Blood tofu i guess, it's a thing in chinese cooking where u just let the blood coagulate into solid (tofu like consistency hence the name), which u then cook it like any other savory protein, stirfty, stew etc I remembered they sell it as street food in Taiwan🤔

That was really interesting to watch! Thanks! I‘m from the Northwest of Germany. Here we‘ve got a traditional food called Panhas. It was originally a dish created from leftovers when making sausages, I believe. The broth the sausages were cooked in, was super fatty and spiced and also contained pieces of pork and bacon from burst sausages. So it was a great base to which people added buckwheat flour, blood and bits and pieces of meat. The cooled preparation was then cut into thick slices and fried in a pan. Delicious! It‘s not very known to young Germans anymore, but I have fond childhood memories of my grandfather getting it fresh from the butcher’s to prepare it for the two of us, because the rest of the family politely declined. Fools!

Here in the North-east part of Mexico (the state’s name is Nuevo León) we have a traditional dish called “Fritada”. Its ingredients include blood, viscera, and gut of a goatling

Blodpudding here in Sweden is still fairly common although I haven't seen it in schools in a long time. I haven't heard of Blodplättar before, but it seems like they're both just a variation on the same thing, blood and flour mixed together, but Blodpudding is spiced with cloves among other things and gets cooked/set in an oven before frying it in a pan. I've never seen anyone eat it with syrup but bacon and lingon are common. Blood's a unique flavor, once you get past it being blood, it's usually all good.

Also, Viet Nam has several blood dishes including tiet canh (a raw duck or pork blood soup), pork blood cubes (common in bun bo hue, the spicy beef noodle soup), and doi huyet (blood sausages). Here in Vietnam, we have 'Tiet Canh' (raw blood pudding), a fresh dish from fresh animal blood mixed with fish sauce or lightly salted water mixed with meat, chopped cartilage, sliced liver, roasted peanuts, rice paper, and herbs, ... Most Vietnamese make this dish by using blood from pork and duck (sometimes chicken).

I'm a 2nd generation Chinese immigrant in Sweden. Growing up in southern Sweden blodpudding was always a controversial food in school but I loved it. Something the native Swedish teachers found very amusing as they could not even get their kids to eat it. In fact I love blodpudding as a stand in for black pudding in my Full English Breakfast.

In South India we make something called 'ratha poriyal' which is like scrambled blood with seasoning. Apparently it's very tasty and is somewhat of a delicacy... I don't know because I'm a vegetarian. But try it. 😅😅

In Vietnam, we have something called Tiết canh which is blood pudding with added cooked meat. Usually, pork and duck are the most common animal used to create this raw blood pudding.

In Iceland we have a dish called "Blóðmör" and its made out of Sheep blood Rye Some other stuff We eat it in January with other stuff like sheep testicles and fermented shark as a part of "Þorri" which is a celebration of the end of winter or something. Oh and we also have sheep liver sausages

In Austria we have a kind of sausage called "Blunzn", in Germany they call it "Blutwurst" translating to bloodsausage and that's kinda what it is, pork sausage with meat, organs and blood. But to be fair it's the only dish I know in my region that asked for blood as a ingredient.

My mom used to make these for me as a kid. I'm more used to eating them with sugared and crushed lingonberries, never heard of eating them with bacon but sounds good. The other pancake showing in the Finnish grocery store is made out of spinach. You can make those from spring nettle leaves at home. We also have quiete common dish that's a sort of blood pudding or "veripalttu" in Finnish. One maybe a bit weird thing in Finnish cuisine is liver casserole that's one of the most sold ready-made foods in Finland. It's made out of liver, rice, syrup and raisins. That's also eaten with lingonberries or lingonberry jam. You can sure make it at home but it's really common to buy it from the store.
