Making Pickled Quail Eggs!

We have been hatching quail babies on the homestead this winter and are amazed at how fast they are growing. From hatching to laying eggs in just 8 weeks. Today we are making pickled quail eggs!
The pickling solution is:
1 cup white vinegar
1 cup apple cider vinegar
1 tablespoon salt
2 tsp. pickling spice
1 tsp. red pepper flakes
4 cloves of minced garlic
Bring to a boil and then allow to return to room temperature. Pour over eggs and refrigerate for 5-7 days.

I got addicted to pickled quail eggs when I was in China. You could get a jar of a couple dozen for 5 or 6 yen (roughly 75 cents American at the time) at just about any corner store. For anyone who hasn't tried them, quail eggs taste about...85% like a chickens egg but creamier. A bit more smooth texture wise and slightly richer. They are also about 70% yoke which is a gigantic selling point in my book.

I prefer eggs pickled with beets too, I prefer the taste, and I love red color. I like to pickle mine till the yolks turn red too.

In Cambodia, they sell these (Not pickled, just boiled) in little packets with salt and spices, you used to get about a dozen in a pack for about 50 cents while drinking beer. Beer and egg farts, anyone? Worth it.

For beets I just used the recipe in the Ball canning book. They’re delicious! Sarah’s recipe for the eggs was really good! I’m a chile hound so i put a couple Scotch Bonnet and jalapeños more than she suggested but they came out great. This recipe that Kevin is using is about what I did.

Aww. I can't wait to get some quail of our own!! I'm going to start out with 2 quail, 2 goats and a few chickens. Thanks for sharing all the great information about raising these guys! I cant wait for enough support, so I can start my own non-profit program in the near future. I would love to donate most of what I grow to people in need!

You really need to keep about 4-5 female / 1 male. Otherwise they're just going to be raped continuously as quail have a very "active" sex life.

You can soak the boiled quail eggs over night shells on in strait vinegar. It will dissolved he shell and leave the membrane. Lot easier peelin. Thanks again from central Arkansas

Hey, that's a great idea! Then you can take the liquid, now full of calcium & magnesium, and dilute it 10 parts water to one part solution and use to boost the calcium & magnesium in your soil for your tomatoes and peppers to help prevent blossom end rot. Can also be done with chicken eggs...

@@knogues I love the idea of salvaging the minerals, but is 10:1 dilute enough to not injure the plants with vinegar? You've done it successfully? I hope so; I want to implement that trick!

I had to go back and watch the video again by the Rusted Gardener, Gary Pilachard, to make sure I didn't mislead you. He takes about a tablespoon crushed eggshells and adds a tablespoon white vinegar, lets it sit for 30 minutes, pours the mixture into a gallon of water, then says to put the one gallon mixture into a five gallon bucket of water to water plants twice a week. The vinegar acidity is neutralized by the calcium in the eggshells. When we started noticing BER, I used this mixture 1 tablespoons per 1 gallon last year and poured it across the mounds (not deep watering) and then watered it in. We did not see any adverse reaction with growing our tomatoes.

HI Kevin and Sarah. I too have just journeyed into raising quail and I can't believe A How small they are when they first hatch and B How quickly they mature. We used a combination of your quail house build and SlightlyRednecked's quail house. My first egg was exactly 6 weeks to the day from hatching. I couldn't believe it. We are still waiting for eggs from chickens that hatched in early April. We only processed our first 6 quail boys to eat yesterday. So many eggs, so now to watch this video on pickling them.

If you want to look for efficienies, once the water starts to boil, you can turn off the stove and cover the pot for the 3min, the eggs ( all eggs ) will cook just the same as leaving the stove on. ( just like you did for the second boil for pickling ).

I saw quail in the freezer section of my grocery store. 4 quail in such a small box. I just kept thinking of tooth picks when I amagined the drumsticks. Ill try them one day.

I stuffed them with apples and cashews bread stuffing. Seared them in cast iron and finished for a bit in the oven.

I never did anything with quail, but I'd love to, ever since I ran across a grouse in the pasture, near my land! They are really pretty. I don't know how they taste, but I could never do the processing anyhow, so I will focus on eggs! I have 4 bantam layers, 2 of which a bigger hens, but lay tiny very light blue eggs! They are barnyard mixers, whose daddy must've been small, momma was cream legbar. They lay a lot. This is what I want to do with the eggs, so great idea for a video, it came at a great time for us. Maybe my husband won't be so disappointed about the tiny eggs if I find a fun way to prepare them!

I don't know why I haven't tried pickling any of my quail eggs yet... You've convinced me I need to try it soon! Especially since my only incubator is going to be used to hatch some chicks soon!

I have found that steaming their eggs instead of boiling makes them easier to peel

Just put them in vinegar. The shell will dissolve. Then all you have to do is pull the skin off of them. The vinegar wont penetrate the skin.

Hi Kevin, thanks for another very nice video. You can put the boiled eggs in vinegar overnight, then the next day the shell in dissolved, at least for the most part depending on the timing, and you can easily remove the membrane.

Hi guys, I just watched Kevin pickling his quail eggs, and he said 2 didn't peel well. There is a trick I learned online from someone that showed how to peel eggs vary easily. Put your egg in a glass with just about enough to cover half the egg. Cover with your hand and give it a good shaking. That should peel all the shell from your egg.

I use to raise quails and I pickled the eggs using a solution of water and vinegar to boil them in. The vinegar would eat the shell off the eggs and all you had to do was rinse the eggs and put them in the pickling solution worked really well.

I made some lacto fermented dill pickles. Once the pickles were gone I popped some HB eggs in the brine and let them "pickle" for about a week..... SOOO GOOD!

I lived in a part of China for a few years where pickled quail eggs were sold for like, 75 cents a jar with like 20 or so in a tall jar. When we moved to another area I thought I might need rehab I was so addicted to those little buggers. Where I live in the States now, there is actually a local company that sells them but sadly they aren't cheap. They're 8$ for a jar with maybe 15-20 eggs with garlic and jalapenos (which I'm not complaining about, pickled garlic and hot peppers are almost as tasty)

Growing up we would make pickled beets and when we ate all the beets we would put the hard boiled eggs in the pickled beet solution and set it back in the refrigerator for a week. After a week we would enjoy our pink pickled eggs. They were yummy.

I'm going to try this with my abundance of chicken eggs I have at the moment. Believe it or not, I've never had a pickled egg in my life! I've always heard how good they were. I'm sure homemade ones taste so much better then the store bought. Now since I know how to make them I'll have to give them a try! Thanks for sharing the recipe. God bless y'all☺

I've never had quail eggs, but when i boil chicken eggs i put cold eggs in hot almost boiling water. They peel so easy! I boil the water then let it cool just enough that it is not boiling, put the cold eggs in, then return to a boil for the time you need, 15 minutes for me at 6000 ft elevation.

I usually use left over dill pickle juice for my pickled eggs. I’ve tried with recipe and it is really good. The pepper flakes 👍. All my Button Quail didn’t make it into bottle either 🤣. Thank Kevin.

In a nutshell, excellent meat, egg production, or reproduction just 6 weeks after hatching, all done in a relatively small area. How's that for practical?

When you said cover the eggs with 2" of water, did you mean water 2" deep or 2" above the eggs; which would be around 3" deep? Also, can't they pickle at room temperature? You've got me sold on quail. I visited someone who raised quail when I was a kid and remembered those quail all these years. You've reminded me that now I could raise my own and added them to my list of animals I'll include on the homestead I'm planning. I've often thought how fine it would be, if the predator pressure isn't too intense, to release my own covey to roam free around the place, maybe providing feed to encourage them to remain nearby. When I first heard you mention raising quail, you can bet I perked right up. Thanks for making them a feature!

"cover" is above the level of the eggs. you want to have enough water to distribute the temperature evenly around all the eggs.

Releasing domestic quail into the wild is a bad idea, and illegal, even farm-raised bobwhite without a permit. Domestic birds have great potential to spread disease to native birds, or act as a vector. Most likely, they'd all be lunch within days anyway, or succumb to some disease or hardship for which they have no defense.

As far as room temperature, you would need to be intending to ferment them. Just pickled, they need to be refrigerated.

I have never had pickled quail eggs but I have had pickled chicken eggs. We would go down to the neighborhood grocery store which was the size of the convenience stores of today and they would have a big ole glass jar of pickled eggs on the counter. They were pickled in the hot sausage juice after all the sausage was gone. They were the best! They were pink also. Don't know if you could pickle them that way today with all the additives and chemicals they put in everything. Can't find them anymore. : ( Much Love and Blessings

I had thought to pickle the eggs when we had our quail, but stopped cold at the thought of peeling all of those little eggs..lol! You make it look so easy.. Quail will probably be a do-over when we get moved and I can set them up like i want. i have learned a lot from ya'll and am inspired to try new things... i never wanted to raise pigs before ( we raise hog dogs.. i figured it would be like raising foxes and chickens on the same place...lol) but after watching your butchering video, i'm thinking that i'd like to try it. I've helped process deer and feral hogs after they were field dressed, so i am not squeamish, but have never tried a domestic pig..

Domestic pigs are easier and cleaner to dress than wild (but a whole extra layer of work if you scald and scrape, which you definitely should do for a domestic), and give a whole lot more precious fat!

I do that, but with chicken eggs, and ill toss in 1 or 2 hot peppers simple cut longways up the middle in 2 pieces. TASTY!
