It is the perfect time for mango kuchela as mangoes are in season. Kuchela is a spicy condiment prepared in a similar fashion as amchar and it contains lots of garlic, pepper, mustard oil, shadow beni and amchar masala. Kuchela has Indian roots and though the original recipes would have been brought by the indentured immigrants, much of what we know about Kuchela today would be adaptations of the original composition. Extremely delicious nevertheless and is considered a must have for several occasions. Kuchela makes every meal more palatable and over the years I have learnt, in pleasantly and surprisingly creative ways, that it blends well with different flavour profiles and cuisines.
