Today we are making a homemade chicken sandwich from KFC, but not just any fried chicken sandwich, we are making the double down. Two pieces of fried chicken with special sauce, bacon, and cheese. It's a beautiful monstrosity of a sandwich. I'll also share some top tips for how to deep fry chicken at home. Let's do this.

Since buying my first wok I have always used it for frying. I figured the Chinese do a lot of frying so the kitchen tools they use would be best suited. A very good tip 👍

Grade A sammich BUT... it really needed a little kitchen torch or broiler action to melt that cheese. That would have maxed this thing out.

Great tip about frying in the wok. Since we got a new cooktop with a 22,500 BTU wok burner, I've been wokking around the clock. Also, nice to see you using Mountain Rose Herbs (Ancho Chili powder). We love their products but they don't have as wide a selection as say Frontier does.

after low temp pass(below 140c), you want another pass at high temp(180c), but very quick, like 30seconds or 20 seconds. this so the out layer will even be more crispy, and also this process sucks out oil(yep).

Drain station tip. If you line hte bottom with paper towels, then invert the wire rack. You create a wick. the metal wicks the oil away while the paper absorbs it. It works fantastically. Feel free to still dab it with papertowel at first to get it going though.

You don't have to boil it to dissolve salt. Solubility of NaCl does not change much by temperature.

No you don’t have to, but it does dissolve quicker in hotter water. Also the more important piece is the hot water will help release more volatile oils in the herbs/spices for infusing the flavor of the brine.

a tip when flouring your chicken is to use a plastic bag and shake it. it will help getting the flower everywhere without the mess. and you shake it off in the bag.

I stick my used oil in the freezer. It helps the fatty acids from degrading while sitting there. It also allows the cold to help separate more of the unwanted solids in solution~

Really loving your content. About the brine, Bon Appetits turkey video tested wet brining and dry brining and found dry brining to be the sweet spot between juiciness and flavor. Water brining can dampen the chicken flavor, since you're pushing straight water into the meat.

you could maybe use a homemade chicken stock, or a combination of salt for the exterior and a liquid like soy sauce or chiken stock for the interior (with the help of a syringe)... There may be some things to try !

fuck dude i actually worked at KFC back in high school when they first introduced the double down to the menu. It, or its single filet sandwich counterpart, the doublicious, were fire. The Colonel's sauce was definitely what made them IMO. Nice iteration tho

Would you be so kind as to provide a link to or at least the brand and size of the wok you are using? Yours appears to be stainless steel, not the normally recommended carbon steel one, as well as it appearing larger than the recommended 14 inch diameter ones. You are becoming my new Alton Brown because, like him, you prepare/create quality recipes and provide the background food science with a measured sense of humor, rather than all that goofiness. In the process of making this right now! I saw your video on TikTok and pulled my chicken out last night to thaw! It's in the brine right now, and I had a quick question: I do not have peanut oil, and I doubt I'd be able to find any in stores, considering the pandemic. Is sunflower oil an adequate substitute for peanut oil? Thanks!

Taryn McLamb not sure about sunflower oil. I heard canola oil is a good substitute for peanut to get the crispness.

So sunflower wont get quite as crispy due to a lower % of saturated fat ~10% compared to ~17% in peanut oil. If you have vegetable oil thats usually 12-13% and would be the next best choice, but if sunflower is all you have use it!

Just saying, if your using thighs its better to take it out at 170 as apposed to 160 or 165, as its dark meat it will stop it from going dry and it will also be incredibly more tender
