I had to put a screen on the vent cap of the kitchen hood or the flies would find a way through. It's amazing that you are able to move around so well after your injury. Hoping the doctor gives you some good news when he gets back.

I watched my Daddy cook down many pounds of lard and the cracklins was mighty good in cornbread or by themselves he cooked it in a cast ironwash pot just keep on keeping on

reminds me when I was a kid and butchering time. It was the kids job to clean caseings, then we had to scrape them with a dull kinfe till my uncle could read a news paper through them. our treat was cracklins, sometimes we would eat to many anmd I think you klnow what happens next
The wild hogs we harvest in North West Texas don't have fat on them like the Alabama wild hogs, if you get two or three pounds of fat that is a bunch for ours.
Every thing you guys make look so good and I know it is too ! Heck Jeff I bet you have to walk 5 miles day so you don’t get fat glad you have your neck brace off of you it looked better. I bet you’re more comfortable too.
Wait, what? The only cracklins I ever ate came from a black iron kettle over an open wood burnin fire. After hours of trimming the hogs we killed earlier in the day. It don't seem right makin lard and crackins in a pot on a cook stove....
