I've done a similar recipe twice. The first time was over smoked just like yours. The second time I made sure I had really clean smoke and a lot less time and it was phenomenal!

Yeah man it’s a solid technique, but Malcom had it on for over an hour, and I think that’s just too much time for that macaroni, AND the smoke. The few times I’ve done smoked mac and cheese I cooked the macaroni al dente and it was the last thing to go in, right before I put it on the smoker. I probably had it on for less than an hour. I’ll have to go look at the video. But I think that’s the key for this method. It’s definitely easier than making a roux, but you gotta really watch your time or the pasta will be gummy.

Man honestly, I think fixing that recipe for me at least would be as easy as shortening the cook time. It was on for over an hour, and the macaroni was in there the whole time.

Hey Ron, I’ve seen someone pan/dump pasta casseroles on smokers, and they usually turn out pretty good. It’s amazing how a person can put all of that raw in a pan and it turns out so good. The backyard is definitely not ideal for what you do, but I’m sure that you will make it all work out.

Man I've just been grilling in the front yard, right in front of the front door, lol! There's some lighting there but there's also an outlet to plug in my ring light. It'll work until I we get back home.

Glad you got a place you like for now. I’d give that recipe a try. I do a similar thing with oven-baked lasagna, I use the regular noodles but I don’t boil them before hand. I put them in a tray and cover them with the hottest tap water I can get while I make the sauce and cheese filling. They get softened up just enough and finish cooking in the oven. I got that technique from The Stay at Home Chef. Great stuff as always, man!

Never would have thought to put hot sauce in Mac n cheese, but I'll never turn down hot sauce ☺ Great review

Thanks! Franks isn’t your typical hot sauce. It has a nice flavor. Most hot sauces are about just being hot.

@@RonOnTheGrill true, I always say on my channel "sweet isn't a flavour", same goes for hot sauce. You should be able to taste the peppers and maybe a little smokiness to it ☺
