Really cool watching your fermentation process. I know little of how its done in this world but I work in a beer cellar and I have had a few run-ins with spoilage bacteria, even though we ferment everything in airlocked tanks. Many of them are lacto because they are some of the only things that survive the pH drop, though I have tasted some funky things that definitely come from other organisms. Yeast can make some odd flavors when they're stressed, too. Thanks for the vid, I subscribed

That's a nice set up! Thanks for sharing your process. It makes me feel like I'm on the right track. There's a lot to unpack in there. Two quick questions. Did you stir the whole time you were step mashing, and how did you rack the liquid off. It looked like about 9 gal. collected. Nice video 🧡
Thank you! I like your Rig too. I stirred a lot but not the whole time. I would shut off the fire periodically and it held temps. And yea I lost a few gallons Wheat is a pain to strain. I was using a filter bucket system. A fruit press would be ideal. Thanks for watching.
