Wow, thank you young chef. Ive made a lot of mistakes too, but hopefully I can share enough of the good ive learned so you all don't have to make the same mistakes.

Thank you for this, Chef. I completely agree with what you have said. For a long time, I was hesitant to take that next step into the Executive Chef role specifically because I knew that it would require me to step back from cooking. Cooking was my first love but there came a time when I needed to take that next step to keep growing. and you are right, being an Executive Chef is like being a director of a major movie production. You have got to be in control of all the multitude of moving parts that contributes to the main goal, guest experience and satisfaction. And you need to have all your systems and procedures to help you be successful.

Thank you for the feedback and thank you for sharing your thoughts. I fought it for a long time myself, Its my love of cooking that drives me, but it's necessary. to evolve for the sake of those were responsible for.

how do you even put your foot in the culinary world without going to school

I dont think Culinary School is necessary but I am personally glad I went, I know a large number of chefs who went and many who didn't. all successful at different levels. I really think it depends on the situation. School can be right for some, but alternatively a cook can go and work for a great chef and get paid to learn as opposed to going in debt. I believe that the kitchen is a lot like the "trades" that way but the mentor is key. Regardless, it needs to be hands-on and passed on by teaching. Thanks for the comment.

@@b2wtkagm thanks for the feedback, I’m working on it. The cue cards keep me from getting the total brain farts of forgetting to make my point. Check back later and let me know if it’s any better.
