Mango Jam in Goa is called Mangaad and is prepared during the mango season in a large batch so you could still taste mangoes through the monsoons too.
Mangaad is a rust-colored sweet and delicious jam. Although Mangaad is mostly made using Musrad mangoes, you can make mangaad using other mango varieties as well.
It is usually made with just three ingredients. Mainly mangoes, sugar, and cinnamon or cloves.
The ratio of sugar and mango pulp is 1:2. i.e; 1 part of sugar: and 2 parts of pulp.
Try to use the said quantity as sugar helps with the jam thickening and also acts as a great preservative.
While cooking the jam be extra careful as the mixture is extremely hot and as it bubbles there are sudden splashes that could burn your skin. Use a long ladle or wear a mitten.
Jam is ready when you get a rust-colored mixture and your desired spreadable consistency. Kindly consider that the jam further thickens as it cools down. Do not overcook the jam as it might lead to sugar crystallization and also change in color and taste.
