Mango Mustard Chutney Recipe - Kasundi Mustard Sauce - Bengali Mustard Sauce

Kasundi is a super yummy Indian mango mustard sauce which is prepared with rawa mangoes and mustard seeds, this tempting and delicious sauce which goes well with pakoras, pizza, sandwich or any other snacks.
Ingredients
Raw mangoes - 2 (300 grams)
Ginger - ½ inch piece
Green chilies - 2
Yellow mustard seeds - ¼ cup (50 grams)
Black mustard seeds - ¼ cup (50 grams)
Mustard oil - 3 to 4 tbsp
Vinegar - 2 tbsp
Asafoetida - ¼ tsp
Turmeric powder -1 tsp
Red chilly powder - 1 tsp
Black pepper - 1 tsp
Fenugreek seeds - 1 tsp
Coriander powder - 2 tsp
Sugar - 2 tsp
Salt - 2.5 tsp (or to taste)

This recipe originates from Bengal. Bengalis love mustard and consume the most in India per capita. Mustard oil is almost invariably used in Bengali cuisine and a lot of fish dishes incorporate mustard paste and mustard oil.

For storage, do we need to keep it in the fridge? Or can be stored at room temperature like any pickle for 6 months?

we have this amazing sauce with karela fry or any green leafy vegetable fry. it can be had with anything. completely changes the bland taste of any food.
