Mango Sago || Quick and refreshing summer Mango desserts Recipe - RKC
Mango Sago is a quick, refreshing, and satisfying summer dessert popular in Asia, with juicy chunks of mango and a mango/evaporated milk tapioca pudding.
Ingredients:
1 cup mini tapioca pearls (uncooked)
3-4 ripe yellow mangoes
1 can evaporated milk
1/2 cup sweetened condensed milk (adjust to taste)
Water to cook the tapioca pearls
Preparation:
Cook Tapioca Pearls: Boil water, add tapioca pearls, and cook for 18-20 min and simmer it for 5 more min until they turn translucent with a tiny white dot in the center. Then, turn off the heat and let them sit until fully transparent around 10 min. Rinse under cold water and drain to cool, then soak in a bowl of cold water and set aside.
Chop 2 mangoes and reserve 1/4 cup for topping. Mix the rest with evaporated milk and condensed milk.
Make mango puree with 2 mangoes and Mix with evaporated milk and condensed milk. Stir in tapioca pearls and mango cubes.
This dessert can be easily veganized by substituting the condensed milk with simple syrup or agave.

Notes
Simmer for 20 minutes, or until the tapioca is completely transparent, which means they’re fully cooked.
If after 20 minutes, the pearls still have a white center, turn off the heat, cover, and let the tapioca sit in the hot water for another 10 minutes, until translucent.
