Maori Fried Bread 

My Take on Maori Fried Bread.
Recipe:
I always use my big standing mixer to knead bread dough. I never satisfied kneading dough with my hand 😁 You can use your hands too to knead the dough.
Dry ingredients:
4 cups of plain flour. I used Bread flour. I find using bread flour makes these fried bread softer.
2 Tbsp of baking powder.
1 tsp of salt.
1/2 tsp of bi-carb soda / baking soda.
Wet ingredients:
3 Tbsp grape seed oil. You can use any plain oil, for example don’t use coconut oil or olive oil. You can also use melted butter instead of oil.
1 cup of warm water.
1/2 cup of warm milk.
Enough oil for deep frying. I used Rice Bran Oil.
Method:
Use hook attachment.
Put dry ingredients into a large mixer and mix well.
While it’s turning on lowest speed, gradually add wet ingredients. Mix all until incorporated.
Then keep mixing for about 5 mins until a dough form. It’ll be a bit sticky. Then take the hook attachment put, cover with cling wrap (I used clean tea towel) and rest for 30 mins.
Heat enough oil up to 170 C or about 350 F.
It is important to heat your oil to the right temperature to avoid oily fried bread 🥯 either this Maori fried bread or other fried bread like
dougnuts 🍩
Lightly floured your working surface.
Take the dough out, knead gently then cut to total 8 pieces. ^^cut less if you’d like bigger size fried bread.
So I flattened the dough, cut to 2, then to 4 and to 8.
I used my hand to stretch the dough a bit to the sides before frying. Shake off excess flour, by doing this the oil won’t get dirty and you won’t get black bits on your fried bread. Fry until browned. Don’t forget to keep turning.
