Maple Syrup Smoked Chicken | Pit Boss Vertical Smoker

Today we are going to show you how to smoke a whole chicken in your Pit Boss vertical pellet smoker. Its easy to do and you only need a few ingredients.
To start, dry off your whole chicken as much as you can. If you put the chicken in wet, the skin wont crisp up for you.
Then, pour some pure maple syrup (not the fake kind) on the whole chicken and rub it in. Make sure you get some of the maple syrup under the skin too.
Next, we seasoned the whole chicken with Pit Boss Competition Blend rub and the Pit Boss Sweet Heat Rub.
After you have everything nice and seasoned, put it in your pre-heated smoker. We set our Pit Boss Vertical Pellet Smoker to 250 degrees Fahrenheit and let both whole chickens cook until they reached an internal temperature of 165 degrees Fahrenheit in the thickest parts of the chicken.
At the one hour mark, we opened the door to the smoker to baste the chicken in a little bit more maple syrup and sprinkled on a little bit more of the Pit Boss rubs.

This is great man!...i roll smoke heavy...first hour in the smoke. But I gotta protect that skin from looking like a burnt dark piece of crap. So I just mummify the thing in some cheap bar s fatty bacon. The bacon gets the brunt. Turns black ,looks nasty. I toss the bacon after its done it's job. Then finish that sucker off in an oven to crisp the skin. Lol. I never season the skin cause the bbq sauce I add after its crisp and nice is good and more than enough skin flavors. That smoke will stick to alot and will cling to seasoning and turn black quick lol. First step in my smoking is to protect the skin and just get some smoke lol. Man. Your vids are great and much much respect to your awesome cooks!

I like the syrup glaze idea. I'd suggest getting a smoke tube for denser smoke and you can run at a higher temp for crispy skin. Damn, I gotta go to the store now...

Just picked up a Pro Series 2 series 4v2 today bought it for $150 been using a Masterbuilt pellet unit piece of junk would take me at least 1 1/2 hours to get it fired up. Will be doing a whole chicken on my new baby tomorrow can't wait to see how it comes out. Gave it a fire up run today was so smooth I couldn't believe it. Your chickens look awesome

New subscriber and new vertical pit boss owner. I'm a rookie at all of this and have really enjoyed your videos. They have been a great help. I'm going to be doing a chicken very similar to this. Any advice on doing a rack of ribs a whole chicken and sausage all on the same day? Temps and time estimates. Thanks! Great video! Im interested im making something similar soon! I've had great luck with an herb rub chicken. Brine, rest, rub, smoke, enjoy! I have had fantastic luck with crispy skin on a chicken that size! Make your own herb BUTTER (Kerrygold). Put the butter under and on the skin along with your rub on top. I butterfly and smoke at the same temp, then crank it to 400-450 once I reach an internal temp of 150 (this also depends on how the skin is looking) if it's already crispy you can aluminum foil hat the browned spots to ensure it doesn't burn. just keep an eye on the temp of the chicken and color of the skin. It typically takes 10-15 min at the end depending on the hight of the rack. Keep up the great videos. Im going to smoke my turkey for Thanksgiving this year! I've practiced on some larger chickens and very excited to get the turkey in there!!!!

Used the exact same smoker today for the first time w/pork chops as the guinea pig. Fail. However, after seeing your video, tomorrow's chicken is gonna be epic. I hope. BTW, great tutorial! Will follow step by step and hope for the best! Also, what temp and time-frame would you recommend for simple pork chops? The enclosed manual was NOT that helpful. Thanks dude!!

Great video! Filling a little bowl with syrup and mixing in the rubs would probably be easier to baste from using the brush. Just a thought for the future!

I am enjoying your videos and learning a lot. I received the Pit Boss series, 5 vertical smoker, as a gift and I'm so excited. Yesterday, first time trying the smoker, I smoked chicken halves. I preheated 250 and put the dry cold chicken in the smoker. Everything was going good about an hour into cooking I noticed hugh flames coming from the sides of the burner box and making a roaring sound. I got scared and turned it off and after about 5 minutes turned it back on to the smoke setting then eventually putting on the gas grill to finished cooking. Is the flames normal? I thought it was going to explode LOL

Thank you Elaine. I am to please. Yeah it is normal to see the flames under the heat deflector and the roaring sound. A grease fire would be something to worry about and I don’t think you had a grease fire with it being brand new. Just keep that water pan full and you should be good

I did a whole bird on my Copperhead (series 5 Pit Boss VS) I buttered the bird completely, separating skin from bird, rubbed the between skin and meat making whole bird liberally coated then seasoned and put in at similar temp as you. About 4 hours later fall off the bone done and nice and crispy on the skin. Great video Buckeye. Even if you are on the Cleveland-Hopkins flight path. You ever get a second probe from PB?

Great video, I’ve just got this smoker. Do you find that you have to set the smoker hotter than you intend to smoke at? If I set the smoker to 225f, my external probes only get to 200f so I have to set it at 250f

The Pit boss rubs I have gotten are really salty. Do they have any that do not have so much salt content? I have ended up having to take them and blending together with my own spices to cut the saltiness.

On the pit boss smoker you have to switch it to the smoke setting to get it to smoke the pellets. How often did you put smoke it up while they were cooking? Also what temperature does the cooker go to when it's set on smoke

Hey I'm experiencing an issue. I followed your video instructions but after 5 hours the meat between the leg quarter and breast is still pink and bloody. However the thickest part of the breast probes at 160. Any suggestions??

It’s really difficult to crisp up the skin. I used a Cooking spray on my recent turkey video and it worked pretty good so I think butter would work too.

Ive made this twice with your video. Now my Mother inlaw wants some for her Birthday party. So im going to do 275 and 6 birds. Does this sound ok? My skin is never crispy so not sure.

275 is good. With 6 birds in there it may take longer than you are used to so give yourself some extra time.

Hi, AJ! I havent smoked a whole turkey yet but I did smoke one of those boneless turkey breast roasts and it came out awesome. Cooking it at the lower temperature (250 degrees) kept it nice and juicy.

More curious why you don’t line the water pan with foil for ease of clean up.

Hi, John. In my opinion I dont think it does any good. The grease gets down under the foil when it mixes with the water. There are also vents in the top of the pan that the foil covers up. I've tried cutting holes in the foil where the vents are but it ends up tearing the foil.

I take my index finger and gently push the foil in the vent slits so it doesn’t tear the foil but opens the vents. I agree there is grease between the foil and pan but a little hot water and dawn in the kitchen sink to me is better than than having to scour off baked on grease. I was thinking of you and your wing video the other day where you tried foil in the grate. Have you ever thought of mesh grill mats. I want to do some fish but don’t want it to fall through the grates. Bet Lake Erie perch with a touch of lemon pepper and lemon juice when on the plate would be great.

So I am kind of confused.. If smoke only works till around 140-150 degs, and then beyond that you are just baking it.... Why preheat the smoker to 250? Dont you lose the smoke cycle of 0-140? Or does the Pitboss put off good smoke at the 250 temp, and the meat will just consume the smoke flavor until reaching the 140-150 and then continue to bake from there. ???

You nailed it. The meat will stop absorbing smoke when it reaches approx 150-160 degrees. The pit boss puts out good smoke up to 275 degrees. If you aren’t in hurry, set the smoker to 200 or 225 and let it go until it’s cooked.

Why didn't you start off using two racks? And why didn't you put water in the water pan? I thought you had to have water in the pan, to avoid error messages.

I’ll have to go back and watch again but I always put water in the pan. When the unit is warming up I sometimes leave it empty just to burn off any pathogens that might be in there. As for the second rack, I wanted to see if I could fit two birds on one rack. I have the smallest of their vertical smokers and a lot of people watch these videos to help them decide on what to buy. For a lot of people, seeing that they barely fit helped them decide on a larger unit.

I like the idea of the foil, but a coworker of mine who uses a traeger recommended a roaster pan he got from Walmart. He just puts whatever he is cooking on the grates of the roaster pan and has zero clean up other than the roaster pan.

Hey, Charles. There could be a lot of reasons. It is difficult to get that crispy skin when smoking at the lower temps. I like to crank the heat all the way up to 350-375 for the last 10-15 minutes and that usually does the trick.
