I love the way Marco communicates his passion and love of food, he is without doubt a truly great chef but for me what really sets him apart is the way he simplifies cooking so that people without experience can create amazing food. This recipe is a good example, I looked at another recipe by a well known TV personality cook, the list of ingredients was as long as your arm and included wood fired roasted grapes! As for stock pots and cubes I now use them all the time, I've currently got Marco's chilli con carne simmering away, it looks and tastes amazing. Hats off to Marco, in my opinion Britains finest chef.

Enclave he wasn’t playing a character back then but he had high expectations put into him, he then demanded high expectations from his staff and he made sure his expectations were met. Their he is cooking by himself, for himself for him to enjoy. Restaurant kitchen is one of weirdest places ever especially at the level Marco was at.
Ahh the salad from my childhood. Not because we ate it, but because the whole family adored faulty towers and one episode was based upon this salad 😂. Finally after all these years I get to make it.
Apples with sharpness, work better I find. So typically green apples are used. I've had some red/yellow apple variants in waldorf, they don't work as well. The sharpness makes it taste fresh instead of the sweet richness. If the apple is firm and has some sharpness, it should work either way, your choice, really.
Greetings from Bangalore, india. One look and i know this gentleman is genuine class. And that class sits easy on his shoulders. For us novices he takes trouble to simplify the recipe. Love his advice to simplify and enjoy life. Thats what cooking is all about. Will make this. One question though...can I use pecans in place of walnuts?
