• Salted Caramel Sauce
For base
250 soft butter
250 soft brown sugar
200g ground almonds
50g cocoa powder
3 eggs
For malt cream filling
250g mascarpone
500g double cream
150g soft brown sugar
50g malt extract
For soft chocolate ganache
200g cold water
3g agar agar (in the video I said 1.5G - I lied lol)
100g dark chocolate
100g milk chocolate
600g double cream
