Just like how culinary art has evolved over the years, so has bartending. There are competitions for bartending, even extending to world class (name of the competition) competitors. These people are not your regular "let's get fucked up bartenders" who just serve you your beer or drink. They take pride in the drinks they fabricate just like how chef's do when creating new options on the menu. They take pride in decorating the drink, garnishing it so that the scent enhances the flavor because the smells affect how something tastes; this is similar to a chef's methods of plating. Some people take bartending as a serious profession. It's their lives and this is how they want to rise to the next level. Why must we always judge irrationally, and be so quick to judge others. Pretentiousness has a place in this world, and there are a lot of people who actually appreciate it.

I don't get art or music, but I understand such things exist. I like it when people take their craft and elevate it to art. It might not be something I'm into, but it is a neat experience.

Cool I'll just carefully lift this delicate sugar nest out and hope to god I don't drop a quail egg into my glass, then try to enjoy my drink with an eggshell reeking of spraypaint right in front of me. Top score.

You add it to the drink depending on your taste. You first lift out the nest and take a sip of the prepared drink and then you can add more bitters if you'd like. This is to give respect to the bartender's experience in preparing cocktails. I'm pretty sure that the eggs are chocolate or something similar so you can eat them, and the sugar nest if you'd like. People who pay for this cocktail are most likely rich enough to just let the decoration go to waste though. I think if you ate them you'd be advertising that you're not rich enough to have this kind of treatment more than once.
There is not much difference really. You stir pretty long to get cold and dilution anyways, so you can also add the ice first and let it precool the glass and ingredients.
She wouldn't have to. People who can afford her services are not likely to be those who can let themselves go at an event. This is not only about the taste of the cocktail, viewing her making the cocktail is also part of the experience. And a queue of a dozen desperate drunks would probably be the kind of people who would order a draft beer which not only take a minute each to prepare, but would be unlikely to be served at a cocktail bar in the first place.
Hi im 5 years late..no this is pointless as much as the comment above me...cold drink pour on an iceball for 5 seconds doesnt melt the ice..so no need for even melting..she is just showing off..poorly
Excuse? What's wrong with taking an interest in that and making it a lifestyle? Besides it's beautiful and it's an artistic service that you're commissioning. Like getting a painting. You tell her what you want and she gives you that and then some and she's happy to do it for you.

All those pretentious garnishes are pretty much nonsense. All you gonna do is put those aside and drink anyway. The drink is probably delicious, but no need to flex. Making a tasty drink is good enough.
She should just straw taste the drink rather dripping it off the bar spoon onto her hand and literally sucking it off lol. She's just trying to be different and honestly that's kind of gross with her saliva on her hands that's preparing a drink, not to mention the lipstick coming off. Imagine her doing that during service...

+Cathy Ortiz most bartender use a straw, put a tiny amount in their mount and then throw the straw away. Much cleaner and more hygienic than dripping stuff on your hand and licking it off
