It's better to roast the spices before blending. In India, we always roast it before blending so that the flavors become milder and mend together instead of giving off the individual taste when consumed.

@@sanjuaushaandewinda6608, no need to search; I know. The original is from Chennai, and is called "Kotthu Parotta". "Kotthu" refers to the sound that is made when chopping the parotta on the cast iron tawa. No need for cheese, lol! That just ruins the taste of the spices! 😆
