Mashed Potato with Stir-Fry Vegetables and Meat Gravy

This fusion style dish is a hit with both adults and children!!! It is a great way to incorporate lots of veggies in one dish, especially with picky eaters! The buttery mashed potato goes well with the savory meat gravy with a subtle tarty flavor.
RECIPE
INGREDIENTS FOR GRAVY
2 1/2 tablespoon soy sauce
1 tablespoon dark soy sauce
2 tablespoon ketchup
1/2 tablespoon corn / potato starch
1 teaspoon sugar
1/2 teaspoon vinegar
1 1/2 cup water
INGREDIENTS FOR MASHED POTATO
4 - 5 medium potatoes - cut coarsely
1 tablespoon butter
A pinch of salt
OTHER INGREDIENTS
1/2 cup diced carrots
1/2 cup diced celery
1/2 cup diced red bell pepper
1/2 cup diced onions
1/2 cup green peas
1/2 pounds (225grams) minced pork
Cooking Oil
INSTRUCTIONS
1. Mix all the ingredients for gravy together. Set aside.
2. Place coarsely cut potatoes into a medium-sized pot. Add enough water to cover the potatoes. Sprinkle a pinch of salt.
3. Cook potatoes until soft, about 15 minutes on medium heat.
4. Strain the potatoes and add in butter and a pinch of salt.
5. Mash the potato with a masher or fork.
6. Shape the mashed potato into a dome on a clean plate. Set aside.
7. Heat a wok / a large saucepan on the stove on medium heat.
8. Add 1 spoon of cooking oil into the wok.
9. Stir fry diced onion until slightly brown.
10. Add in minced meat and cook until it is half-cooked
11. Add in all the vegetables and stir fry for 5 minutes or half cooked.
12. Add in the gravy and cook until it has thickened, and vegetables (especially carrots) are soft, about 15 minutes. Turn off heat.
13. Pour the gravy all over mashed potato. Serve immediately.
